A creamy, sweet dessert studded with apples and walnuts then drenched in a caramel sauce that will knock your socks off. Caramel Apple Bread Pudding is the most incredible dessert for fall, easy to make and great for entertaining.
Who else is sweating out an Indian summer right now? I can hardly believe it, we had a few crisp days where I was thrilled to pull out my jeans and long-sleeved tee’s….then, without warning, it’s 90 degrees again. It’s the time of year when you don’t really know how to dress because when you leave in the morning there’s a chill in the air. You toss on a lightweight leather jacket and check out your chic self in the mirror before starting your day…then three hours later, you’re sweating. Because it’s not fall yet…and the shirt you were covering with your jacket is stained and wrinkled. You no longer feel chic but more like a sweaty, disheveled mess. Or is that just me?
If the sky wasn’t so blue and the grass so green and the air just perfect, I would stay home and bake. And wait…for the day when I can wear jeans all day without overheating around noon. I know this will be a different story a couple months from now when I’m already tired of wearing sweaters and big bulky coats but for now…the change is cool with me. And so I bake….and whip up things that are the perfect way to welcome cool, crisp days.
This Caramel Apple Bread Pudding is just the thing. It’s like a warm hug on a cold winter’s day. This custardy dish is studded with apples and walnuts….it’s wonderful for dessert or as a decadent brunch dish. Or eat the leftovers for breakfast….it’s ok, it has eggs in it. And if you’re a fan of caramel apples like I am but don’t like the whole acrobatics associated with eating a caramel apple, you’ll totally dig this recipe. I topped each hunk of bread pudding with a healthy dose of my caramel sauce. See, I told you I was going to put caramel on all the things. I wasn’t stopping at these trifles or THESE quesadillas that I’ve been eating every single day.
I’ll be serving Caramel Apple Bread Pudding this Thanksgiving as dessert….unless I change my mind and make this Pumpkin Bread Pudding…..or maybe I’ll make both. And skip the turkey? Possibly? Can you have Thanksgiving with just sides and dessert? I think I’ll start a new tradition this year.
Caramel Apple Bread Pudding
- 2 cups heavy cream
- 5 large eggs
- 3/4 cup brown sugar
- 1 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon kosher salt
- 7 cups bread cubes (cut the bread into 1 inch cubes and then measure 7 cups)
- 2 fuji apples, peeled, cored and coarsely chopped
- 1/2 cup chopped walnuts
- 1 1/2 cups caramel sauce
- Preheat oven to 350 degrees.
- In a large bowl, whisk together the cream, eggs, brown sugar, cinnamon, nutmeg, and salt.
- Add the bread, apples and walnuts to bowl tossing to coat. Pour the mixture into a 11x8 inch baking dish coated with cooking spray and bake until set, approximately 35-40 minutes.
- Serve the bread pudding topped with the sauce.
