Apple Cider Simple Syrup

I’m not one of those people that glorifies “busy”. In fact, I hate being busy…it’s stressful when I have a week packed with appointments, meetings and business travel. Now, don’t get me wrong…I LOVE my job. It’s the best job in the world but it seems like all the urgent, deadline driven activities all fall around the same time. And then I’m busy. Like super, ridiculously, crash into bed at 8:30 PM busy. That’s uncool. I miss out on simple things because I’m so insane running around trying to get things done that I don’t take a minute to stop and smell…the cider.
So I did. I stopped for a moment…and I took Landon to a Merrymead Farm not far from our house for their Harvest Festival. We’ve been going there for years to pick out our pumpkins and stuff our faces with cider donuts. And I’ve been so busy…we almost missed it this year…but we didn’t. We went to the farm, bought a bag full of fresh, warm cider donuts and boarded the hayride for a leisurely ride around the farm. We ate ALL the donuts and visited some farm animals…and then we picked out a few pumpkins. (Which we did not carve because…too busy.) On the way out, I grabbed a steaming cup of hot cider to remind me that fall is fleeting. You have to stop being busy for a moment and enjoy the crisp, crunchy leaves under your feet.
When I we finally wandered back to the house, I came up with a few fall recipe ideas that were totally inspired by our little outing…see how that works. Inspiration straight from the farm! I decided to create this amazing Apple Cider Simple Syrup to use in a few drink recipes just to give them that fall flair. I LOVE Apple Cider so this is pretty killer because the flavor intensifies so beautifully. And it’s great as a replacement for this plain simple syrup. It’s perfect for giving your drinks a little fall kick in the pants. Iced Tea? Yeah, it’s just dreamy with Apple Cider Simple Syrup. And may I suggest sipping while noshing on a few of these mini cheesecakes? They’re fall epitomized.
Get the Recipe: Apple Cider Simple Syrup
Ingredients
- 1 cup apple cider
- 1 cup light brown sugar
- 1 cinnamon stick
Instructions
- In a small saucepan, bring the apple cider, sugar and cinnamon to a boil. Allow the mixture to boil until the sugar is completely dissolved and then turn the heat to low. Simmer until the mixture becomes thick and syrupy, approximately 5-10 minutes. Allow the syrup to cool and transfer to an airtight container in the refrigerator until ready to use.
- The syrup will keep in the refrigerator up to 1 month.
