Hey y’all! I just got back from a long beach weekend at the Jersey Shore and, whoa, was that a much needed break. I managed to stay off all social media, minus a few posts from my trip on Instagram, for a total technology detox. I had no idea how exhausted I truly was until my head hit the hotel pillow on Friday night. My legs were aching from my daily runs and my brain was aching from the last minute time crunch on a few projects that were due in the middle of last week. It was great to just sit on the beach and listen to the waves crash while dodging the seagulls (people, don’t feed the gulls your sandwich….just don’t.) We visited a few of our favorite restaurants and did a little shopping on 96th street in Stone Harbor while eating ice cream every single night. I’m finally refreshed and relaxed and ready for a new week and boy, do I have a fresh new favorite to share with you.

Right before I left for my mini vacation Harry & David sent me a box of gorgeous cherries. They were so juicy and sweet. Cherries are my absolute favorite fruit…I think because their season is so short and you can only get really fantastic cherries a few months a year. They truly remind me of my childhood because we had a cherry tree in our backyard. Granted, it was a sour cherry tree but it never stopped me from eating every single cherry my little hands could reach. I used to climb as high as I could and sit in the branches while eating all the cherries. Without a care in the world. I, especially, miss that last part. 🙂

I love adding fresh cherries to simple recipes like an easy clafoutis…but they’re equally amazing when just tossed into a quick breakfast like this Cherry Pistachio Ricotta Bowl with Honey and Cacao Nibs. I went healthy….I know, so unusual but really…it tastes like dessert and you’ll want to eat this all day long. It’s simple, fresh and fast. The most time spent is pitting the cherries but I made short work of that task with my favorite OXO Cherry Pitter. It’s the best few bucks I ever spent and it’s great for olive pitting too! So, it’s not a seasonal item, you’ll be using this all year long…especially when you decide you want to make this gorgeous and simple pie. 🙂

This Cherry Pistachio Ricotta Bowl with Honey and Cacao Nibs, really, couldn’t be simpler to prepare. Ingredients

  • 1 1/2 cups part-skim ricotta cheese
  • 1 cup pitted and halved fresh cherries
  • 1/2 cup chopped raw pistachios
  • 1/4 cup raw cacao nibs
  • 2 tablespoons honey

Instructions 

  • Spoon 3/4 cup ricotta cheese into each of two bowls.
  • Top each bowl with 1/2 cup cherries, 1/4 cup pistachios and 2 tablespoons cacao nibs.
  • Drizzle each with 1 tablespoon honey.
  • Serve immediately.
