7 Layer Mexican Hummus Dip
Keep your resolutions in check with a healthy party dip! This 7 Layer Mexican Hummus Dip is a lighter version of everyone’s favorite party food that’s great for every occasion!
Some people are breakfast people, others live for a lavish dinner….me? I’m a die-hard snacker. I love chips and dips…..pretzels with mustard, salty or sweet…if there’s a nibble in the vicinity I’m going to dive in head first. This, unfortunately, can be a detriment to my New Year’s resolution to eat a little healthier. So, I try my best to find ways to make snacking a little healthier, like an ingredient replacement for one of my favorite recipes….like the party staple 7 Layer Mexican Hummus Dip. It’s layer upon layer of tasty deliciousness with every single swipe of your chip tasting completely different than the last. It’s a dip that never gets boring. And my local ACME Markets had everything I needed (AND MORE) to make my dip seriously amazing.

To start my dip recipe, I replaced the old standby….refried beans with a layer of smooth and creamy O Organics Hummus. By using the hummus instead of the refried beans, I slashed calories a bit and added a unique flavor that’s a pleasant surprise to the taste buds once you work your way down to that last layer. Then, I topped the hummus with fresh and mild O Organics Salsa. This salsa is amazing….it’s made with fresh chopped tomatoes, similar to a pico de Gallo, and tastes just like it was plucked right from your garden. It’s fantastic on it’s own but adds a blast of flavor to this dip recipe. Next, I topped my salsa with a layer of Signature Cafe® Traditional Guacamole. Let me tell you something about this guac….I’m a guac snob and usually make it myself but this guacamole is busting at the seams with fresh flavor. Fresh avocados blended with tangy tomatillos, jalapeños and cilantro, you may have trouble even getting this one into your dip because I was eating it out of the container with a spoon. (Good thing I bought THREE of them!)
To finish off my 7 Layer Mexican Hummus Dip I added a smooth topping of O Organics Sour Cream then sprinkled with a handful of O Organics Shredded Mexican Style Blend Cheese. Next, I topped with Signature Kitchens® Ripe Sliced Olives which are made with my FAVORITE California Ripe Olives and are an excellent source of healthy fats. I snack on these regularly straight from the can! Then, the final ingredients are arranged on top…..O Organics Cilantro for a fresh bright flavor, fresh chopped jalapeños and sliced grape tomatoes…kinda like the cherry on top but cherries would be weird on a Mexican dip. 🙂

- 1 container O Organics Hummus
- 1 container O Organics Mild Salsa
- 1 8 ounce container Signature Cafe Traditional Guacamole
- 1/2 cup O Organics Sour Cream
- 1/4 cup O Organics Mexican Shredded Cheese
- 1/4 cup Signature Kitchens Ripe Sliced Olives
- 1/4 cup O Organics Cilantro
- 1/2 jalapeno seeded and finely diced
- 5-6 grape tomatoes sliced in half, optional
- In an 8x8 inch baking dish (or equivalent size serving dish), spread the hummus in an even layer.
- Top evenly with the salsa, guacamole and sour cream.
- Sprinkle with the shredded cheese, olives, cilantro and jalapeño.
- Garnish with tomatoes and chill, covered, for up to 8 hours.
- Serve with tortilla chips or vegetables for dipping.
