Strawberry Coconut Margarita Popsicles
Tropical, fruity margaritas frozen into cool, refreshing treats. Strawberry Coconut Margarita Popsicles will be the hit of any summer party and are a fantastic way to beat the heat. Slightly boozy and made with fresh strawberries, they are a little bit healthy too…I think.
A few summers ago, I discovered the Fresh Strawberry Coconut Margarita from Jessica at How Sweet It Is. They are a creamy and addicting concoction with the consistency of a smoothie…a boozy smoothie but less icy. Am I making sense? Probably not but anyway…I consumed a lot of them. And my pants got a little snugger because sometimes smoothies are not light on the calories….but again, it’s not a smoothie…it’s a margarita and I got it all confused so that may have been the problem. In case you were wondering, or are thoroughly confused as well.
Basically, Jessica blended up some strawberry syrup with a little cream of coconut and coconut water, threw in some some lime and a little happy sauce in the form of tequila and grand mariner…then called it a day. Well, maybe not but after I have a few of these…that’s what I do. If you haven’t visited her blog yet, you may want to go check it out…she has all kinds of ridiculousness going on over there from breakfast burgers to quinoa bowls…there’s something for everyone. Her trashed up treats are amazing and her stories are totally hilarious. And what’s really awesome is she seems to be exactly that person…in person. I got to meet her at a conference recently….she’s stunningly beautiful and really sweet. At least she acted sweet when we met, she could be a witch and that was was her shifty cover.
Anyway, confusion aside (I’m all over the place this morning) how did I get to the popsicles you ask? Well, seeing that her boozy margarita smoothies were going down a little too fast I needed to find a way to slow down my consumption…and I lightened them up a little bit. Just a smidge by omitting the half the cream of coconut and replacing it with light coconut milk. I also added a bit of confectioner’s sugar and did not make the strawberry simple syrup because I’m too lazy for all of that. That’s about it….blend until smooth and pour into the molds. Freeze and wait….and wait. I know, it would be faster to just drink it from the blender but let’s just try to act civilized this summer. Your guests will love you for it. These Strawberry Coconut Margarita Popsicles would be great served with my Blueberry Mojito Popsicles just to give your guests (and your palate) some variety.

Ingredients
- 1 1/2 ounces Grand Marnier
- 1 1/2 ounces Hornitas tequila
- 2 ounces lime juice
- 1/4 cup coconut water
- 1 ounce cream de coconut
- 1 ounce light coconut milk
- 1/2 cup fresh strawberries
- 1 tablespoon confectioners' sugar
Instructions
- Place all ingredients in a blender and puree until smooth. Pour the mixture into popsicle molds and insert the stick. Freeze until firm, about 4 hours. Run the mold under warm water for 10 seconds and remove the popsicles. Freeze until ready to serve.
