Happy Friday, everyone! The week is finally over and I’m looking forward to a few holiday festivities this weekend. Which is, very much, needed given I’m not feeling very Falalalala-ish. It’s like 70 degrees today and it really doesn’t feel like December. I feel like I live in the south…not Philadelphia, where we usually have at least a snow flurry by now. I’m not really complaining but it’s a little hard to feel Christmas-y when you’re wearing a lightweight t-shirt and jeans to do your holiday shopping.
So, when OXO asked me to create a recipe using their new On Illuminating Digital Immersion Blender, I decided to make a soup…a festive soup that would be the perfect first course for your holiday meal. I had some really great ideas and when it came down to it….none of them were working for me given the spring-like temperatures. All I kept thinking about was downing a quart of this Strawberry Soup I whipped up earlier in the year. It’s cool and refreshing, creamy and sweet…almost like dessert. But Strawberries are a little meh right now so I decided to use the next best thing…cranberries! Cranberries are still taking over the entrance to the produce section at my local grocery store so I figured..what the heck, Chilled Cranberry Soup for the holidays. It works, it’s festive and you can make it in advance.

This Chilled Cranberry Soup is really simple to whip up and if you have a favorite homemade cranberry sauce recipe like THIS one I use every year, you can totally use it in this recipe. It’s also great for cocktail parties served in mini shot glasses for a quick taste without having to worry about balancing a bowl with one hand and your cocktail in the other. Serve with a dollop of sour cream and THESE sugared cranberries if you want to be super fancy. Winning at holiday entertaining….your friends and family will be so impressed. 🙂
Get the Recipe: Chilled Cranberry Soup
Ingredients
- 1 1/2 cup whole berry cranberry sauce
- 4 ounces mascarpone cheese
- 4 tablespoons low-fat plain greek yogurt
- zest and juice of 1 clementine, or a small orange
- 1/4 cup confectioners' sugar
- 1/2 cup half and half
- 1 1/2 cups low-fat milk
Instructions
- In a medium bowl or saucepan, blend together the cranberry sauce, mascarpone cheese, yogurt, zest, orange juice, sugar, half and half and milk with an immersion blender until smooth and creamy.
- Transfer to an airtight container and chill for 30 minutes or up to 24 hours.
- Serve with a dollop of sour cream and sugared cranberries if desired.
