Frozen Piña Colada Cocktail
If you like piña coladas, and getting caught in the rain… Well, you know the rest! This frozen tropical cocktail is one of my all-time favorites, and I’m so excited to get to share it with the world. I’ve tried many a piña colada recipe that either tasted way too much like rum or had no rum at all.
I’ve had some that were blended too thick to drink through a straw, and some that were more liquid in consistency than icy. This easy piña colada recipe doesn’t ever run into any of those problems!
So, what makes this cocktail recipe so perfect? Let’s start with the ingredients that are blended together to create this little vacation in a glass. diced frozen pineapple is used instead of fresh, that way it also doubles as the ice! I don’t really like blending ice into a cocktail, as I feel that it waters the drink down.
Instead, I use frozen pineapples to both create the right flavor and consistency of this paradisiacal drink. Then, I amp up that flavor even more with sweet pineapple juice.
The only other two ingredients that are necessary for these coladas are coconut cream and white rum. While many recipes call for cream of coconut, I prefer using coconut cream, as I find it has a more authentic coconut flavor and helps to add a certain silkiness to the overall drink.
And when it comes to the white rum, there are plenty of brands that’ll get the job done! Just keep in mind that your cocktail is only ever as good as the liquor you use, so try to stay away from the bottom shelf if you can. Oh – and don’t forget to garnish with pineapple slices, or course!
How to Make It
Making your own piña colada at home is such a breeze! You’ll feel like you’re relaxing under a palm tree in no time – and you’ll gave paid less than you would at just about any restaurant or resort!
Add. Add the frozen pineapple, pineapple juice, coconut cream and rum to the pitcher of a blender.
Blend. Blend it all together until it’s smooth and creamy.
Pour. Pour the piña coladas into two 8 ounce glasses, garnishing them with pineapple slices for the full tropical effect. Serve immediately, and enjoy!
Can I use flavored rum?
You absolutely can! Here’s the thing – I like using plain white rum because it mixes well with the other ingredients. While the rum flavor is present, it’s not overwhelming. When you start to use things like coconut rum, that coconut flavor is added and is certainly delicious, but the rum flavor may also be more present. Honestly, when it comes to blending up cocktails, it’s always fun to experiment a little and discover what types of alcohol you like the best!
What’s the difference between cream of coconut and coconut cream?
These two things are NOT the same, no matter how similar they sound! As previously mentioned, I use coconut cream in my piña coladas because I find it has a better coconut flavor that doesn’t taste so artificial. Cream of coconut is more liquid in consistency than coconut cream, and has a lot of added sugar. Use coconut cream for a less sugary cocktail that’s still full of coconut flavor and oh-so creamy.
