Fruity Pebbles Cereal Pancakes

It’s hard to pick a favorite sugary breakfast cereal, but if I had to narrow it down to one delicious box… I’d probably pick Fruity Pebbles. There’s just something so tasty about the artificial fruit flavors and loads of sugar that take me right back to my childhood! Instead of eating a bowl of it by itself though, I prefer to feel nostalgic by mixing it into homemade pancake batter.

On top of the freshly flipped and buttered pancakes, you’ll find ooey gooey marshmallow fluff! Don’t worry, you don’t have to try to make that from scratch first thing in the morning. Just zap a store-bought jar in the microwave for a few moments until it’s ready to pour onto your sweet pancakes! While this is possibly the most kid friendly breakfast I can think of, adults (like me!) love it just as much. It’s a dessert for breakfast – that’s enough to make the biggest night owl smile!

While this dessert for breakfast may not be the most sustainable start of the day on a daily basis, it’s a super fun way to surprise your family or roommates from time to time. Whether you’re waking someone up on their birthday or first day of school, Fruity Pebbles pancakes are the most exciting way to surprise someone in the kitchen! They’re vibrantly rainbow colored and marshmallow fluff topped, all while being fluffy and perfectly homemade.

How to Make Fruity Pebbles Cereal Pancakes

Whisk. In a medium mixing bowl whisk together the flour, sugar, baking powder and salt. Next whisk in the milk, melted butter and eggs. Whisk until just combined.

Make it fruity! Stir in the Fruity Pebbles cereal.

Heat. Heat a non-stick skillet or griddle to medium heat. 

Prepare the pan. Lightly grease your pan with some spray oil or a little touch of butter.

Pour the batter. Using a ¼ measuring cup scoop out the batter and place into your skillet or griddle. Repeat for however many will fit without touching in your pan. 

Cook. Cook until they surface of the pancakes start to bubble about 1-2 minutes. 

Flip! Flip the pancakes and cook the other side 1-2 minutes.

Keep warm. Remove from pan and keep warm while you repeat the cooking process with the rest of the batter. 

Warm up the marshmallow fluff. When all of the pancakes are cooked, prepare the marshmallow fluff. Place the marshmallow fluff into a medium microwave safe bowl. Microwave for 15-20 seconds and stir. You may need to microwave a bit more to get it to a drizzable consistency. Keep your eye on it in the microwave it will expand greatly when heating up, so you will need a much large bowl than you think. 

Enjoy! Spoon the marshmallow fluff over your pancakes and serve!

Tips and Tricks

  • Try spreading a fruit jam on top of your pancakes to compliment the Fruit Pebbles! Easy Strawberry Jam is a great addition to these pancakes.
  • When the pancakes are still cooking, I like to sprinkle extra Fruity Pebbles on top of them for a fun pop of rainbow color.
  • Wondering how I got my pancakes so perfectly round? I used a Dash mini griddle.
  • Yes, you can switch things up by swapping out the Fruity Pebbles for Cocoa Pebbles if you’re craving chocolate!

Any fruit jam is also amazing on these pancakes.
I sprinkle a little extra fruity pebbles on the top of the pancake while they are cooking to give them an extra pop of color.
I get perfectly round pancakes by using a Dash mini griddle, they make the best pancakes!
