Whip up these easy Mocha Mousse Parfaits with Bailey’s Whipped Cream to enjoy during the weekend to satisfy your sweet tooth!

Guess what friends…..I got a new gig! Don’t worry though, you’ll still get your regular recipes here at The Suburban Soapbox but now I’ll also be a contributor over at the Hamilton Beach blog “Everday Good Thinking!” How awesome is that??? I’m seriously psyched and have been keeping this huge secret for months. I’ve been dying to share the news with you because I get to give things away too!!! Like this amazing 2-Way FlexBrew Coffee Maker…..that I’m totally in love with. Really…it’s pretty killer because no matter how much you love coffee, this coffee maker is the one for you. Like one cup? Just make one cup…you can use those handy single-serve pods OR your favorite brewed coffee because it comes with a little single serve basket. Just like the basket on the OTHER side that makes up to 12 cups! You can also use it to make tea so you don’t even have to be a coffee drinker to fall in love with it.

And if you don’t drink coffee at all….you can just make a tiny bit for a recipe. Like this Mocha Mousse Parfait with Bailey’s Whipped Cream. They are seriously amazing.

I don’t frequently make desserts with coffee because I always make too much coffee and then have a ton leftover…which I then tend to drink because…why waste it. And I definitely don’t need that much caffeine in my life, I should stop at two cups. That’s why I’m in love with the 2-Way FlexBrew Coffee Maker. This is the perfect appliance for my household because we drink coffee….all the time. A little, a lot…all day long. In the evening, I set it to make a big pot in the morning to wake up to. And then in the afternoon, I can make just one cup with the single serve side using either my favorite ground coffee or a single-serve pack. This also allows me to make just enough coffee for my favorite desserts.

These Mocha Mousse Parfaits with Bailey’s Whipped Cream only use 1/2 a cup of coffee. So, you only need to use half a cup of water in the single-serve brew side with enough grounds for half a cup. No waste…not ridiculous caffeine high from excessive amounts of coffee.
