Put those radish greens to good use. This easy to make Radish Green Pesto is made in just a few minutes and with 5 ingredients. The perfect condiment or spread for grilled beef, fish or a slice of bread. Serve as a dip with veggies or smear a bit on a slice of radish for an extra peppery bite.
I’m trying hard to waste less food. Kinda like the chefs that market themselves as nose to tail…I’m going to do that with my vegetables. Simply because 1. I’m tired of cleaning out my vegetable bin to find wilted, slimy veggie greens attached to my still, kinda fresh veggies and 2. I don’t know how to butcher a pig or a cow. And even if I did….I would just rather leave it to the pros. Plus…I’m not sure how I feel about the whole nose to tail movement. I think I’ll pass on the tail….and the nose. But give me a giant Porterhouse that’s already to go and I’m there!
As part of #BrunchWeek (more details coming soon), Grimmway Farms sent me a giant box of goodness. Which was timely because I had just gotten back from a long run and was eyeing up a slice of cake. If you haven’t heard already, cake is not a very good recovery snack. However….carrots, green juices, kale and radishes are perfect. Coincidentally, that is everything Grimmway Farms had sent to me. They are my new BFF’s. 🙂 The radishes looked perfect and were calling to me. After a quick rinse I started eating them out of hand….with butter and sea salt, of course.
Then I realized…I had a big pile or radish greens to deal with and they were so fresh and crisp, I couldn’t bare toss them into the trash. But since I wasn’t really ready to eat them I wanted to preserve them so they didn’t turn into a mess of green goo in the bottom of my vegetable bin. I thought for exactly 10 seconds about what I would make with them when pesto popped into my brain. I once had an overabundance of sage which I turned into Sage Pesto, you know…just to see how it turned out and it was amazing. Everything into the food processor and two minutes later, fresh, green, peppery pesto was born. I slathered it on a slice of
cake bread and enjoyed every.single.bite. It tastes like summer and is perfect as a sandwich spread or sauce for all your grilling recipes.
So, next time you buy a bunch of radishes don’t throw the greens away or let them deteriorate in your refrigerator. Give them a try in this easy to make pesto or come up with your own creation. Easy Radish Green Pesto
- 3 cups radish greens
- 2 garlic cloves
- 1/4 cup toasted pine nuts
- 1 cup parmesan cheese
- 1/4 cup extra virgin olive oil
- kosher salt and pepper to taste
- Throw all the ingredients into the bowl of a food processor and process until smooth, approximately 2 minutes. Season with salt and pepper. Transfer to an airtight container and store in the refrigerator for up to 3 days.
