Hey! Guess what? It’s Monday again. Isn’t it funny how it just keeps coming back like a bad cold. 🙂 Well, for once I’m not too bummed about it because I had a super fantastic weekend and I hope you did too! I took some time off to enjoy the fabulous weather. We kicked off our weekend by seeing Jungle Book on Friday afternoon at Movie Tavern. It was REALLY amazing! The special effects are incredible and the boy in the movie was fantastic. You forget he’s the only human for the entire movie…which, to me, would be tough to pull off as an actor. Which I am not. But he’s amazing. I stuffed my face with tortilla chips and dip during the movie…which wasn’t the best food choice because they’re loud. Like really, obnoxiously loud to chew so I would only eat a chip if it was a really noisy part of the movie. Otherwise, the whole theater could hear me chew. Loudly. Annoying everyone. I should have brought these Mashed Potatoes.
Or THESE Sour Cream and Chive Mashed Potatoes. Which are a great alternative to my original recipe mashed potatoes which are like crack. Everyone begs for them when I’m having dinner but really, they’re not for everyday. Let’s call them special occasion mashed potatoes. So, I created my new favorite Sour Cream and Chive Mashed Potatoes, they’re so simple to make and only require four ingredients (minus the salt and pepper). They’re super fluffy and light, no butter at all (and you won’t even miss it.)
If you prefer to use greek yogurt, it would be a great substitute. But honestly, I read the nutrition facts and there’s not much difference between regular sour cream and greek yogurt. In fact, if you grab the full fat yogurt, it’s much higher in fat than greek yogurt. So, just stick with the good stuff like I do and you’ll be one happy eater. These Sour Cream and Chive Mashed Potatoes are a great way to use up those chives that you forgot to contain in your garden and are…most likely, taking over already. And it’s not even May. The mashed potatoes go splendidly with this Salisbury Steak or this super Pinterest popular turkey meatloaf. So, what did you chew loudly this weekend? 🙂
Sour Cream and Chive Mashed Potatoes
- 6 large potatoes, peeled and chopped
- 1/2 cup sour cream
- 1/4 cup milk
- 1/4 cup fresh chopped chives
- kosher salt and fresh ground pepper
- Add the potatoes to a large pot of generously salted water and bring to a boil. Turn the heat down to a simmer and cook the potatoes until fork tender, approximately 20-25 minutes.
- Drain the potatoes and transfer to a large mixing bowl. Using a hand mixer, beat the potatoes, sour cream and milk until fluffy. Stir in the chives. Season with salt and pepper, to taste. Serve immediately.
