I spend hours a day in my kitchen. Hours. More than the average person so I get plenty of time to look around and dream about what could have been. When we shopped for a house two years ago, I searched for the perfect kitchen. The “dream” kitchen, the one with a huge center island, professional-grade appliances, gorgeous light fixtures. It was so small I could barely wash a small saucepan in it. So, we forged ahead….hastily and gave the kitchen a much needed facelift. We used the paint colors we had in our previous home and picked out appliances without doing ANY research. Mistakes were made and now I’m regretting many of the items that I look at all.day.long. So….I still have dreams of the perfect kitchen when I go to bed at night. Kitchens with gorgeous white cabinetry, stunning glass pendant lights, milky white counter tops and gleaming stainless steel appliances. The appliances….that’s where we will focus first.
This time I did my research and found that Frigidaire has partnered with Lowe’s to launch a brand new line of kitchen appliances. Lowe’s has so many options for any dream kitchen I’m sure you will not have a problem creating your own. And many of the upgrades can be done over a weekend without having to remodel, so you won’t be eating out of a slow cooker for weeks on end.
I, seriously, want to replace all my appliances with Frigidaire Professional….especially the 2-in-1 Over the Range Convection Microwave. While I’m dreaming of working in my dream kitchen, I wanted to whip up a quick dessert that was light and…..well, dreamy. Mug cakes are a dessert lover’s dream, ready in minutes….literally, they are so simple to make. I’m a big chocolate fan and am IN LOVE with this Hot Chocolate Mug Cake recipe but since strawberries are starting to be at their peak right now, I decided to create an airy Strawberries and Cream Mug Cake. This little beauty is speckled with vanilla bean flakes and topped with a smooth, slightly whipped cream. The batter makes enough for two cakes so you can either share the second one with a friend or not…..I did not. You know how I feel about sharing.
If you double the recipe, which I did…they make the perfect quick dessert for drop in guests. They puff up so beautifully and are just as wonderful warm as they are at room temperature. Take a bite and close your eyes….and enjoy your new kitchen. And if you’re not really feeling the strawberries at the moment (or it’s middle of the frigid winter) you can whip up this Chocolate Mug Cake just as quickly!

Ingredients
- 2 tablespoons salted butter
- 1 teaspoon vanilla bean paste or vanilla extract
- 2 tablespoons 2% milk
- 1 large egg
- 1/4 cup granulated sugar
- 1/4 cup self-rising flour
- 3 large strawberries, diced
- 1/2 cup heavy cream
- 3 tablespoons confectioners’ sugar
Instructions
- In a microwave proof mug or bowl, melt the butter in the microwave for 20 seconds. Whisk in the vanilla, milk and egg. Add the sugar and flour to the egg mixture and whisk until smooth. Divide the strawberries between two microwave safe mugs and then pour half the mixture into each mug. (Do not fill more than halfway or the cake will overflow) Microwave on high for 1 minute 45 seconds. The cake is done when the top is firm and springs back when touched. If your cake is still undercooked, continue microwaving in 15 second increments until done.
- In a separate bowl, whisk the cream and confectioners’ sugar until soft peaks form. Top the cakes with the whipped cream and serve immediately.

I made this with half the amount of vanilla extract and with frozen peaches (thawed and diced) instead of strawberries and it turned out really well. It’s definitely eggy but it reminds me of dutch babies and other eggy baked breakfast cakes, so I like it a lot.
Works really well with microwave-safe mini casserole dishes if you have them.
