Homemade Waffles

The first day of school is now behind us and it went by so fast I barely had time to miss my little guy. I really wasn’t ready for school to start since this summer had been a soggy, cool mess but today was like just ripping the bandaid right off…..quickly and somewhat painlessly. And now we’re ready to rock this school year.

And to rock it out properly you need a proper breakfast to fuel you for most of the morning. We absolutely LOVE homemade waffles but to make them in the morning when you’re trying to pack lunches, find missing shoes and round up all the homework they can be a bit messy. Even with an easy waffle mix, why make more dishes to clean up later.

So, I created the BEST Waffle recipe that makes a big enough batch so you can stash away some easy DIY Freezer Waffles to nosh on during the week. These toaster waffles are crisp on the outside, light and fluffy on the inside. And they got the stamp of approval from my personal waffle connoisseur.

How To Make Waffles

Making homemade waffles from scratch is VERY simple to do with ingredients you already have in your pantry.

  1. Whisk together flour, salt, baking powder and sugar to create a waffle mix similar to this Instant Pancake Mix.
  2. Beat together eggs, melted butter and milk.
  3. Stir the egg mixture into the waffle mix to combine.
  4. Heat a waffle iron and cook according to the manufacturer’s directions.

How to Make Waffles with Pancake Mix

You can definitely use pancake mix to make waffles but waffles have a higher fat content that keeps them from sticking. They also have more sugar in the batter to help them become crispy.

If you’re using pancake mix, be sure to add an additional 1 tablespoon butter for each cup of mix you’re using and 1 extra tablespoon of sugar for each cup of mix. This will help ensure your waffles are light and crispy.

Otherwise, you can whip up the dry ingredients for this recipe and store it in the pantry as a simple homemade Waffle Mix.

This waffle batter recipe yields crisp and light waffles that are perfect for freezing. They’re also the perfect waffle iron recipe for weekend brunch. Some days I’ll make the waffle batter the night before and store in in the refrigerator for quick and easy waffles when we wake up. It’s fantastic for overnight guest, too, because who doesn’t love a good waffle?

Serving Suggestions

I like to serve these crispy waffles with piles of fruit salad and smeared with Orange Marmalade with a bit of melted butter and a side of bacon. They’re also fantastic served with fried chicken and drizzled with honey.

Great for sweet or savory meals, these Freezer Waffles are also wonderful for their intended purpose…..easy weekday breakfasts.

Get the Recipe: The Best Waffle Recipe

Freezer friendly waffles that are ready to go in minutes on busy weekday mornings! Great for Sunday brunch, too.

Ingredients

  • 6 cups all purpose flour
  • 3 tablespoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 tablespoon kosher salt
  • 2 tablespoons brown sugar
  • 2 tbsp granulated sugar
  • 1 large egg
  • 1 cup milk
  • 4 tablespoons butter

Equipment

  • 1 waffle iron

Instructions 

To Make the Waffle Mix

  • Whisk together all flour, baking powder, baking soda, salt, brown sugar and granulated sugar in a large bowl and store in an airtight container until ready to use. (If there are clumps of brown sugar you can break them apart with your fingers.)

To Make the Waffles

  • In a large bowl, whisk together 1 egg, 1 cup of milk and 4 tablespoons melted butter until blended. Stir in 1 cup waffle mix until blended but still has some lumps.
  • Preheat a waffle iron.
  • Gently ladle waffle batter onto waffle iron. Cook the waffles according to manufacturers instructions, or approximately 2-3 minutes.
  • Remove the waffles from the iron and serve immediately.
  • Serve immediately or transfer to a platter covered with foil to keep warm.

How to freeze waffles:

  • Allow the waffles to cool to room temperature. Once cooled, transfer to freezer bags and seal, pressing out as much air as possible. 
  • Place the waffles in the freezer and freeze for up to 2 months.
  • To reheat the waffles, simply toast in the toaster until desired degree of doneness. Serve immediately.

Waffles can be frozen for up to 2 months in an airtight container.
