Baked Gnocchi Bolognese Skillet uses leftover Bolognese sauce or your favorite jar sauce to come together ridiculously fast. So hearty and filling, your family will think you slaved for hours making this saucy, cheese skillet of heaven. (Even though you only used FOUR ingredients.)

I’d love to say that leftovers don’t exist in this house but the fact is…..they do. And they die a slow death in the back of the refrigerator, quickly forgotten and turning into something that looks like it was run over by a bus….smashed on the side of the road. Nice visual, I know but so is the container growing fuzz stuffed behind the old salad greens in the garage refrigerator. I hate trash day. Not because of the scary science projects I have to toss but….it’s a reminder of how much food we’re wasting. How much money we are tossing out with the trash, it’s sad and deflating.

With all the best intentions, I try to remind everyone in the house that there’s leftover Beef and Ale Stew or Homemade Chicken Soup in the refrigerator for dinner/lunch/brunch…whatever. But the truth is…nobody really wants to eat the same thing several days in a row. We want new…fresh…like a restaurant. So, I try my darndest to make sure the food gets eaten and this creation is a recipe revamp of our favorite Bolognese Sauce. It’s an oldie…one of my first recipes posted on The Suburban Soapbox but it’s always available in my freezer for quick meals. Sometimes….even if we haven’t had it in weeks….I hear groans when I proclaim that it’s pasta with bolognese night. How dare they.

That’s how this little ditty came about. Groans. Whining….sadness on their faces. First world problems. Luckily for them, I had a package of gnocchi waiting to be used in the fridge. So, I mixed the two together, threw in some spinach…you know, to make it healthy, and topped with a boatload of cheese. I successfully turned those frowns upside down. I mean, seriously, how can you not love rich, hearty bolognese sauce mixed with tender little pillows of heaven doused in melty cheese. Melty CHEESE people!!! And it took me all of 10 minutes to mix together….FOUR ingredients….and one pot to clean. Can I get a Hallelujah? High five for kitchen witchery. There will never be leftovers in the back of the fridge again. Well….I hope to cut back on the fuzzy projects at least.

Thank you! It’s the cheese, it calls to me. 🙂

  2. Angie says:

Leftovers in our fridge always make it into the dog’s bowl. I think he eats better than most of the people in our neighborhood. This baked gnocchi looks so wonderful though, I doubt he’d get more than a wiff before we gobbled it all up!

  3. Colleen (Souffle Bombay) says:

I have never tried gnocchi (shuffles feet), I hear so many good things about it. I need to get around to trying it one of these days. Seems like a nice weeknight dinner!

This looks fantastic! Totally pinning this to make for my family. Ready in 30 minutes AND one-pot? Perfect!

You are one smart momma! I top everything with cheese and they will eat it up! Love that you added some spinach too!

  6. Lana | Never Enough Thyme says:

I make a very similar recipe with gnocchi but I’ve never added spinach. That’s a great idea. And I can sympathize with dreading trash day. It’s always my produce bin that houses the most rejects and I hate that! Throwing away food makes me so cross with myself!

  7. Sarah Walker Caron (Sarah's Cucina Bella) says:

Sadly, leftovers in our house suffer a similar fate. I am working to change that … and this looks like a great option for reusing the leftover bolognese that we always seem to have!

  8. Ashley @ Wishes & Dishes says:

My mother in law just gave me some gnocchi that I had no idea what to do with! Now I know!

  9. Paula - bell'alimento says:

Gnocchi! Fun to say fun to eat!

  10. Cookin Canuck says:

Thankfully, my husband always takes the leftovers for lunch the next day, but I always feel so guilty if there is something that goes bad in the back of the fridge, which still happens too often!

This gnocchi skillet is such a great way to put dinner on the table quickly!
