Summer salads are on repeat right now because they make a healthy, simple meal I can pull together in minutes. So, it’s only fitting that I have a summery dressing that’s equally quick to whip up like this easy Basil Pesto Vinaigrette.

It’s tangy, light, garlicky and simple to make in just a matter of seconds. I love to pour this over all my summer veggies but it’s amazing just drizzled on a caprese salad or on your favorite BLT sandwich.

Pesto Vinaigrette

This simple Pesto Salad Dressing recipe is like a big burst of summer in your mouth.

It all starts with a simple Basil Pesto that we whip up all the time with our garden basil. The pesto recipe is, also, quick to make in minutes but if you don’t have fresh basil or it’s the dead of winter, this easy vinaigrette recipe is fantastic with commercial pesto you can find at the store.

What is Vinaigrette?

A vinaigrette is a simple salad dressing that’s made with oil and something acidic like vinegar, lemon juice or other citrus juice.

It’s usually blended with garlic or a variety of other herbs and flavorings like raspberry or honey.

Pesto Vinaigrette is really easy to make because all the flavor is in the basil pesto already so you’re just adding it to the oil and acid mixture.

The acid used in this vinaigrette recipe is white wine vinegar but you can use whatever you like. Lemon works exceptionally well in this recipe because the homemade pesto I use already has a bit of lemon in it.

How To Make It

Making a vinaigrette is simple to do in just a matter of minutes. Here’s how you do it.

Whisk together the herbs and vinegar.

Slowly stream in the olive oil while continuing to whisk until it forms a creamy consistency.

Store your pesto vinaigrette in an airtight container at room temperature until you’re ready to use.

How To Serve It

We love to serve this Pesto Vinaigrette on freshly sliced summer tomatoes but it’s also amazing on these easy Fried Green Tomatoes if you want something lighter than the creamy sauce we normally use.

Or you can drizzle this over a light, crispy Wedge Salad, put if on your summer sweet corn, and use it as an epic marinade for chicken breasts.
