This time, I decided to throw it into an easy breakfast scramble. One that could be whipped up in a matter of minutes for unexpected brunch guests. Do you ever have those? You know…on Sundays when you’re just getting out of the shower and someone sends you a text saying they want to pop over for a bit? They’re right in your neighborhood for whatever reason? Then you’re scrambling to pull yourself together so you’re not answering the door with a towel on your head? Yeah, you need to have this Cheesy Bacon and Egg Skillet in your arsenal for those days. This Cheesy Bacon and Egg Skillet takes less time to make than it does for my coffee maker to make a pot of coffee. It’s excellent on its own or served with some multi-grain toast. You could also whip up a batch of Green Juice to serve with it and really up the health factor. Either way, you’ll only spend about 10 minutes cooking and only have one pot to clean. Now…if I could only find a way to dry my hair in that amount of time. 🙂

Get the Recipe: Cheesy Bacon and Egg Skillet
- 1/2 cup diced sweet onion
- 1/2 cup diced red bell pepper
- 5 large eggs
- 2 tablespoons milk
- 1/4 cup diced VELVEETA® cheese, room temperature
- 3 sliced cooked bacon
- Kosher salt and pepper
- In a medium non-stick skillet coated with cooking spray, sauté the onions and peppers over medium heat until softened. While the onions and peppers are cooking, whisk together the eggs and milk until combined. Add the egg mixture to the pan and stir. Allow the eggs to cook stirring frequently. When the eggs begin to scramble but are still liquid, add the cheese and stir to melt. Continue to cook until the eggs are scrambled and the cheese is melted. Stir in the bacon and season with salt and pepper to taste. Serve immediately.
