Busy, busy, busy.  That’s what I am right now.  Getting ready to send one kid back to pre-school, one is graduating soon and the holiday season (whether we like it or not) is just around the corner.  I’ve been working my butt off lately just so I can try and squeeze one last trip to the beach in before the Labor Day weekend and sometimes that means I exist on coffee alone.  Which is a very rocky roller coaster because once that caffeine high wears off I just want to lie down and take a nap.  A very, very long nap.

Naps are not very conducive to a busy schedule…you don’t get much done when you’re sleeping.  Unless you’re a sleep walker, you know…those people that supposedly do their dishes, laundry and shop while sleeping?  I don’t know about you but I wish I were one of those people and my dishes would be magically done when I woke up in the morning.  But I’m not, so I rely on other methods to keep my energy levels up when I start to feel them sagging. Most days, I liked to start my days with something other than coffee…like a healthy, refreshing, take me to the tropics smoothie.  This Mango Coconut Lime Smoothie is just the ticket to a day filled with productivity and it only takes a couple minutes to make.  Five ingredients are thrown in the blender and pureed to a creamy, frosty perfection.  Mango, VitaCoco Coconut Water, lime juice, greek yogurt and honey.  That’s it.  The coconut water itself is a tasty and healthy treat that is great to sip when you’re on the run.  I picked up a few bottles 500 ml VitaCoco Coconut Water, Snapple Iced Tea and Bai5 Brasilia Blueberry to keep on hand at my local Walmart store.  They’re easy to find in the juice aisle and all right next to each other.

Ingredients

  • 1 1/2 cups frozen mango chunks
  • 1 cup coconut water
  • 1/4 cup lime juice
  • 1/4 cup plain low fat greek yogurt
  • 1 tablespoon honey

Instructions 

  • Place all ingredients in the blender and puree until smooth. Pour into two glasses and serve immediately.
