Spring is finally here and that, to me, means brunch season!  I love a good brunch recipe and these easy Mini Berry Waffle Cakes are just the thing to kick off spring with bright, vibrant flavor in a personal sized dessert everyone will love.

These easy Mini Waffle Cakes are super easy to throw together in just a few minutes. They’re, also, single serve so you can make just one for a solo brunch or make a whole batch to feed a crowd.

And they’re ready in just about 5 minutes with no baking required thanks to my favorite Lucky Leaf Toppers Fruit Toppings. Lucky Leaf Toppers are single serve containers of their amazing fruit fillings and can be used for soooo many things.

Aside from the waffle cakes, I like using my Lucky Leaf Toppers to stir into yogurt or my morning oatmeal for a quick and easy breakfast.  You can also stir them into your favorite banana bread recipe to add some extra flavor to the mix.

EASY MINI WAFFLE CAKES

To make your Mini Waffle Cakes, simply bake up a batch of your favorite waffles…we love this easy Belgian Waffle recipe, but you can use frozen waffles if you’re looking for something a little more simple.

Top a waffle with a spoonful or two of your favorite Lucky Leaf Topper fruit filling and then spread with a layer of fresh whipped cream.

Place a second waffle on top of the whipped cream and spoon more of your favorite flavor Toppers filling over the waffle. Top with a dollop of whipped cream, a drizzle of fruit filling and you’re done!

We garnish our waffles with some fresh fruit, but it’s totally not necessary and is just an added touch.

CAN YOU MAKE THE WAFFLES IN ADVANCE

You can definitely make the waffles in advance, if you’re making your waffles from scratch. Otherwise, it’s best to toast your waffles and assemble the waffle cake right before serving so they stay crispy.

And you don’t have to use just the berry fruit filling. Lucky Leaf Toppers Fruit Fillings come in a variety of flavors like Blueberry and Strawberry as we used for this recipe, as well as, Apple, Cherry and Peach!

A fun breakfast cake you can make in minutes! Easy mini Waffle Cakes with berries and cream filling are a festive way to celebrate the beginning of a new day.

Ingredients

  • 4 mini belgian waffles
  • 1 cup whipped cream
  • 2 containers Lucky Leaf Toppers Fruit Topping, strawberry or blueberry

Instructions 

  • Arrange two mini waffles on a plate. Top with 1 tablespoon Lucky Leaf Toppers Fruit Filling and spread to coat the waffle.
  • Top the fruit filling with 1 tablespoon whipped cream and place the second waffle on the whipped cream to create the second "cake" layer.
  • Top with the remaining fruit filling and whipped cream. Garnish with fresh fruit, if desired.
  • Serve immediately.

Notes

You can easily use frozen waffles for this recipe or you can make your own with our homemade belgian waffle recipe.
