One Pot Garlic Herb Chicken with Pasta and Artichokes

So, here’s a story I think you can all relate to. You know those days when you’re rushing around in the morning trying to get the kids off to school before they miss the bus, you’re wearing mismatch shoes (but, sadly won’t realize it until you get to the office), pack your lunch (but leave it at home on the counter so the cat can eat it), get in the car only to realize your gas tank is almost empty and you’re already late for work? Been there? Yeah, that was pretty much my life when I worked outside the home. I was a train wreck but somehow managed to look, somewhat, put together despite the mismatch shoes. And as much as I TRIED to have a plan for dinner, I was always running to the grocery store at lunch to pick up a rotisserie chicken so I could make a quick skillet meal or a salad.
The days that I DID have a plan I would always, most likely, forget to take the chicken out of the freezer to thaw. And I would remember that the chicken never left the freezer while on my way to work with the gas light shining brilliantly in my face. Always so awesome. Believe it or not, I still do it today and I work from home. Like two steps from the freezer for hours on end. In my head I hear the constant badgering to take the chicken out of the freezer but I forget because I’m elbows deep in dishes and pie dough. And before you know it…it’s dinner time and all I have is pie.
So, a couple days ago The Good Table sent me a giant box filled with a solution to the “frozen chicken never leaving the freezer” problem. They created the most amazing dinners that bake in just one dish with your frozen chicken breasts right on top. No thawing necessary. They have several varieties to choose from like Teriyaki and Marsala! I chose the Lemon Garlic Herb dinner and it was so, seriously, incredible….there were no leftovers. Like none. That never happens in my house…not even with pie.
I did add a little twist to my Lemon Garlic Herb dinner to create the One Pot Garlic Herb Chicken with Pasta and Artichokes but it still is incredibly simple to make. I poured the pasta and water into the baking dish first.
Then I stirred in the frozen artichoke hearts and sun-dried tomatoes.
Place the chicken on top of the pasta and spread the sauce over the chicken. Cover with foil and bake. About 5 minutes before the end of the cook time, I sprinkled a bit of shredded mozzarella over top and baked until golden.
Served with a salad or some green beans and your family will think it’s Sunday dinner…even if it’s Wednesday and your shoes still do not match.
Get the Recipe: One Pot Garlic Herb Chicken with Pasta and Artichokes
- 1 package Good Table Freezer to Plate Lemon Garlic Herb
- 1 cup frozen artichoke hearts
- 1/4 cup chopped oil packed sun-dried tomatoes
- 4 frozen boneless skinless chicken breasts
- 3/4 cup shredded mozzarella cheese.
- Preheat oven to 425 degrees.
- Pour pasta into engrossed 13x9 glass baking dish.
- Add 1 1/2 cups water, artichoke hearts and tomatoes. Stir to combine.
- Place frozen chicken breasts on top of pasta and spread the lemon garlic herb sauce evenly over the chicken.
- Cover the dish with foil and bake for 40-50 minutes or until the pasta is tender and chicken is cooked through (165 degrees F).
- Sprinkle the cheese over the chicken and pasta. Bake for an additional 3-5 minutes or until golden brown.
- Serve immediately.
