Watermelon Agua Fresca

I’m back….did you miss me?  Did you even realize it’s been eons since my last post?  If you did, I’m sorry….if you didn’t, well, then…ok.

I just got back from a week at the beach and it was wonderful.  There’s just something so reinvigorating about the ocean that I really wish I lived closer.  But then again, maybe I wouldn’t appreciate it as much….I think I would though.  The smell of the salt air and the sound of the seagulls just make my whole body relax immediately.  The rhythmic pounding of the waves can just put my mind at ease while staring out at the sea with nothing but a few boats and a pod of dolphins in my view.  It.was.heaven.

Now I’m back and, thankfully, the weather is just as wonderful at home as it was at the shore.  From what the guy with the bow tie says….it should be like this most of the week.  I can finally enjoy my new backyard without dripping with sweat.  And I have the perfect (and WAY easy) beverage for you to enjoy!

This drink is as refreshing as a dip in the ocean….really.  Light and slightly sweet with the pure essence of watermelon.  Not like a powdered watermelon drink mix at all.  This is so easy….a little messy but worth it in the end.

And if you’re in the partying mode….feel free to add a little vodka or gin!

Watermelon Agua Fresca

Watermelon Agua Fresca

Makes approximately 4 – 8 ounce servings

1/2 large seedless watermelon

1 1/2 cups water

2 1/2 tablespoons sugar (I used caster, or extra-fine, sugar)

3 limes, juiced

Cut the watermelon into large cubes and discard the rinds. Place the watermelon in a blender and puree until smooth.  Pour the watermelon through a mesh strainer into a large bowl.

Add the water, sugar and lime juice to the watermelon juice and stir until the sugar is completely dissolved.

Chill until ready to serve.

Tip: This is best served immediately.  You can chill the watermelon and water ahead of time to ensure it’s cold once made.  If you make it a few hours ahead you will see some separation.  Just stir to combine before serving.
