Strawberries, lime and mint are muddled together then topped with a splash of rum before being finished off with champagne. This Strawberry Champagne Mojito is a great twist on the classic cuban cocktail.
Happy Leap Day, friends! Or…as I call it….the day that makes February never ending and the winter one day longer. I never understood the whole leap year thing….and I think since it throws so many people off (especially those BORN on this day) it should be a national holiday. We should all have the day off to prepare ourselves for March and the wild weather it could, potentially, bring with it. And toast the day with cocktails like Bloody Mary’s, Margaritas and my new favorite Strawberry Champagne Mojitos!
I try to find any way I can to integrate champagne into my day….either in a cupcake or just in a tall, swirly glass. It’s my choice of celebratory libation whenever I have the chance and these days…you can find it relatively inexpensively, but then the champagne purists will say it’s not actually champagne because it doesn’t come from the “champagne” region of France. But whatever…I’ll call it what I want, if it has bubbles…it’s a reason for celebration.
For a long time I thought I didn’t like Mojitos because my first one was of the watermelon variety and was especially artificially flavored. There’s nothing worse than expecting some fresh flavor in a drink and your expectations being dashed with the first sip. You have no other choice than to chug the whole cocktail so you can forget how bad it actually is. Then you order another…or is that just me. 🙂
This Strawberry Champagne Mojito is fresh….and refreshing, full of bright, juicy strawberries and mint with a splash of natural lime juice. Topped with a bit of light rum and champagne, this cocktail is everything you would expect it to be and perfect for your next Spring soiree. It would be fantastic for Easter brunch and is a great way to toast the warmer weather while digging into a breakfast casserole or noshing on some canapés. Or make some eggs Benedict with this easy Hollandaise Sauce! Let’s give winter the old heave-ho…..it’s about time we start thinking about long, summer beach days and picnics in the park. - 1 cup diced strawberries
- 12-14 mint leaves
- 4 teaspoons superfine sugar or simple sugar
- 4 ounces fresh lime juice
- 4 ounces white rum
- 1 bottle champagne
- Place 1/4 cup of strawberries, 3-4 mint leaves, 1 teaspoon sugar (or simple syrup) and 1 ounce of lime juice in the bottom of a champagne glass. Using a muddler, crush the strawberries and mint to release the oils. Stir in 1 ounce of rum. Top with champagne until the glass is filled. Garnish with strawberries and fresh mint leaves, if desired.
- Repeat with remaining cocktails.
