Hey y’all! I hope you had a great weekend! I spent my Saturday working so I can enjoy one last week at the beach before all the school hubbub begins. BUT today, we had family day and spent the afternoon at the movie theatre watching Pete’s Dragon. Have you seen it? If not, take your tissues…holy, it’s a real tear jerker…like two minutes in. So, be ready….because I was not. I don’t remember the original Pete’s Dragon being sad, I think I need to watch it again to refresh my memory. But anyway…let’s talk about school lunches and snacks and stuff.
So, three weeks until my baby boy gets on the big school bus to start kindergarten. Every single time I think about it I feel a little sick…and sad….and want time to stop completely. Or just slow down. But since I can’t do that I’m going to make healthy snacks to eat while he’s away because that’s better than eating a cookie. Am I right? And then I can pack the healthy snacks in my little guys lunch and make things so much easier knowing he’s well nourished and energized. 🙂
These Oatmeal Raisin Energy Bites are so easy to make and taste almost like an Oatmeal Raisin Cookie. I won’t lie…they don’t taste EXACTLY like a cookie but the flavors are amazing and you’ll feel full, satisfied and energized. I love to pop one right before my trip to the gym and they’re fantastic as after school snacks for the kids. They last in the fridge for up to a week but really…..you’ll eat them all before Wednesday. Trust me. Make extra.
To make the Oatmeal Raisin Energy Bites, you’ll add all the ingredients to a big bowl.
Stir until all the ingredients are combined thoroughly.
Roll into balls about 1 inch in diameter.
Arrange on a baking sheet lined with parchment and chill for 1 hour. Transfer to an airtight container and refrigerate for up to 5 days.

Oatmeal Raisin Energy Bites
- 2 cup old fashioned rolled oats
- 3/4 cup raisins
- 1/2 cup almond butter
- 3 tablespoons honey
- 2 tablespoons chia seeds
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 tablespoons water, if needed
- In a large bowl, stir the oats, raisins, almond butter, honey, chia seeds, cinnamon and nutmeg until thoroughly combined. (If the mixture is still dry, add water one tablespoon at a time until moistened enough to stick together.)
- Roll heaping tablespoons of the mixture into balls and place on a baking sheet lined with parchment. Refrigerate the energy balls for 1 hour.
- Transfer to an airtight container for up to five days.
