Pumpkin Pie Smoothie

I know some of you pump the breaks a bit when the pumpkin recipes start too early in the season but I don’t mind giving this Pumpkin Smoothie a pass each year. It satisfies the urge to grab a Pumpkin Spice Latte in the middle of August. Plus, it’s healthy, creamy, cool and satisfying.

I love the fall season because the weather cools a bit…..and all the food tastes like gingerbread and pumpkin. It’s the best time of the year. BUT….I do love the summer so this is like a crossover recipe you can enjoy while still sitting by the pool or while you’re strolling through the fall leaves. Either way…it’s a total win.

How To Make It

Smoothies, in general, are super easy to make and this easy Pumpkin Smoothie recipe is no exception.

Add the pumpkin puree, yogurt, pumpkin butter, milk, pumpkin pie spice and ice to a blender.

Blend until smooth and creamy.

Pour in a glass.

Sip away your troubles!

You can sprinkle your smoothie with some crumbled Gingersnap Cookies or just enjoy it as is. It totally tastes like pumpkin pie without the crust.

Is It Healthy

While it may have a bit more sugar than most smoothie recipes on my blog because of the Pumpkin Butter, it’s still very healthy.

Pumpkin is a known immunity booster and is loaded with vitamin C, vitamin E, iron, and folate, all of which strengthen your immune system. Adding pumpkin to your diet can help your immune cells work better to ward off illness and speed healing when you’re injured.

Pumpkins are also high in lutein and zeaxanthin which may help prevent cataracts and reduce the risk of macular degeneration.

I like to use my homemade Pumpkin Puree (it’s so easy to make in the slow cooker) to get the most benefit from my fall pumpkin recipes.

This smoothie is a very good thing….and so good you may even feel a little bit guilty when you have it for breakfast. Perfectly spiced, not too sweet, smooth, ultra creamy with a tiny bit of tang from the yogurt….this is the BEST Pumpkin Pie Smoothie recipe ever.

It really tastes just like a Pumpkin Pie….I kid you not. I made my husband take a sip and he said “Tastes like pumpkin pie with out the crust.” He likes the crust so he wasn’t totally thrilled with it but hey….my goal was achieved.

Ingredients

  • 1 cup canned pumpkin puree, not pumpkin pie filling
  • 1 cup low-fat plain Greek yogurt
  • ½ cup pumpkin butter
  • 4 tablespoons low-fat milk
  • 1 teaspoon pumpkin pie spice
  • 1 cup ice cubes
  • crushed gingersnap cookies, optional

Equipment

  • blender

Instructions 

  • Place all ingredients in a blender and puree until smooth
  • Scrape down the sides and add ice
  • Puree until smooth and creamy
  • Serve immediately with crushed gingersnap cookies, if desired

Pumpkin Smoothies are best served soon after blending.
