An Italian favorite made better….this easy Sheet Pan Sausage and Peppers recipe is the one “pot” dinner your family will love. Thrown together in minutes, it’s perfect served as a sandwich, piled high on a mountain of pasta or just enjoyed as is in all it’s flavorful glory.
Happy Tuesday! I took a long weekend for the holiday and I’m back with a few long drive revelations to share with all of you. I had to travel to Lancaster, PA TWICE this weekend, which isn’t that bad at all, but the long drive to and from, back to back, two days in a row gives a girl a ton of time to think. And boy, did I have the most epic mood swings EVAH! Things started out just lovely on the way out to my BIL’s house and we had a great visit with some family members we haven’t seen in years. It was a ton of fun to catch up and see everyone just hanging out, relaxing and enjoying the insanely beautiful weather. Then, we drove home on Saturday night late. That’s when the mood took a turn. Granted I was tired and cranky and, generally, didn’t want to be the one to be driving but there wasn’t any other choice and if I wanted to sleep in my own bed….driving was the only option. And here’s what I decided.
I’ve always been a people pleaser….and it’s really not the best thing to be. I love when the people in my life are happy and feel loved but sometimes….I do a ton of extra “stuff” that I THINK people will appreciate only to have it fall, epically, flat. So, all that effort feels wasted and unappreciated. I’m not doing that anymore. I’m not going to overcommit, over promise, or over give. I’m only going to do what feels right….to me….in that moment. And if the other person or persons doesn’t like it, it’s not my fault. I can’t take that on anymore…..it’s simply exhausting. And so, I’m now going to live for me. I already broke the news to my daughter….and she said that the motivational speeches from our barre classes are the reason for my newfound revelation, not my long drive. Whatever it is, I’m already happier for it. And so, easy dinners are going to be on the menu for the unforeseeable future because I’m not running a five star kitchen here, I’m running a blog….and a home. With dishes and dirt and laundry that HAS to get done whether I like it or not.
So, I am a huge fan of the sheet pan dinners like these easy fajitas and this roasted chicken dinner because there’s almost no prep work and just one pan to clean. How genius is that!?!? I wanted to add a few more to the site so I decided what better dinner to make than a Sheet Pan Sausage and Peppers recipe. I mean, this couldn’t be any simpler and you can turn it into something really spectacular. It’s great for an easy weeknight dinner but also would be fabulous for a simple summer meal with friends.
I know this was a long post and a totally long winded way to introduce my new favorite dinner of all time, Sheet Pan Sausage and Peppers, but I am seriously looking for more me time and this recipe certainly shaves off tons of hours in the kitchen. Leaving more time for…..me. And you. And anybody else looking to take care of themselves a bit more. Call it selfish if you’d like but I’m a happier person…..which will make everyone around me happier without any additional effort on my part. That’s pretty genius, don’t ya think?
Easy Sheet Pan Sausage and Peppers
- 6 Italian Sausage Links (sweet or hot OR a combo of both)
- 1 red bell pepper, seeded and sliced
- 1 yellow bell pepper, seeded and sliced
- 1 orange bell pepper, seeded and sliced
- 1 large sweet onions, sliced
- 4 garlic cloves, peeled and smashed
- 2 tablespoons extra virgin olive oil
- 2 tablespoons Italian seasoning
- 1/2 teaspoon kosher salt
- 1/2 teaspoon fresh ground pepper
- Preheat oven to 425 degrees.
- Arrange the sausages in a single layer on a baking sheet lined with parchment or foil.
- Top the sausages with the peppers, onions and garlic.
- Drizzle the olive oil over the vegetables and sprinkle with Italian seasoning, salt and pepper.
- Bake the sausage and peppers for 20-25 minutes until the sausages are brown and cooked through.
- Serve immediately over pasta, if desired.
