Oh my gosh, guys! Do I have a recipe for you!!!! I recently visited a farm in Michigan a few weeks ago and I learned even more about all things PORK. It was my second trip  with the National Pork Board for their recent Pork 2.0 event and we dug even deeper into the world of pork. You know I’m a big pork fan….I mean, who doesn’t like BACON. Am I right?

On the trip, we talked about the farming practices and how they keep the pigs happy. Yes, the pigs are happy during their time on the farm and the farming family takes great pride in making sure they are well taken care of.

From the air quality in the barn (there’s a whole air filtration system that makes sure the air is clean and pure to help prevent illnesses which would require antibiotics) to how they process waste (manure is processed for use as fertilizer which is used on the fields to grow feed for the pigs…..the circle of life right there), every single detail is given careful consideration before they put a new procedure into place.

I shared all the behind the scenes adventures on Instagram, you can view scenes from the trip on the highlight names Pork 2.0! Some things I learned while touring the farm are that pigs are incredibly social and while they can have a whole pen to roam around in with their piggie friends they’ll most likely take a nap lying on top of each other. AND if given the opportunity to chill out in their own little stall, that’s pretty much where they’ll go when they’ve been socially tapped out for the day. Sounds like me when I go to a party.

The farmers even take great care to be sure the transportation system for moving the pigs from farm to farm are clean and free of germs. Trucks are washed with disinfectant and BAKED for 45 minutes at 160 degrees in between trip. The truck wash and air filtration system reduces illness and need for use of antibiotics.

Modern farming practices have improved over the years to ensure the safety of our food allowing us to change how we prepare our food at home. We can now, safely, cook pork products to 145 degrees so we can enjoy tender, juicy pork chops, roasts and tenderloin instead of the dried out pork we remember from our younger years.

Tender, juicy with a slightly pink center and a crispy, butter crust….these Oven Baked Pork Chops are a fantastic and easy dinner that you’re sure to add to the weekly rotation.

What’s the best way to cook pork chops?

Fast and easy is my motto and not having to clean up a stove top from frying is key on busy weeknights, that’s why I’m a BIG fan of Oven Baked Pork Chop recipes. You just arrange everything on a baking sheet, pop it in the oven and wait a bit.

  1. Preheat oven to 400 degrees.
  2. Place your pork chops on a baking sheet lined with foil for easy clean up. Season with salt and pepper
  3. Bake the pork chops in the oven for 25 minutes or until the internal temperature reaches 145 degrees.
  4. Remove the pork chops from the oven and cover with foil. Rest for 10 minutes.

That’s it, easy peasy…..now, let’s take it a step further.

How do you make pork chops tender?

To make your pork chops even juicier, I like to marinade them in a brine for 1-24 hours beforehand. I love a simple buttermilk brine with lemon and herbs but you can get as creative as you like.

If you’re making breaded baked pork chops, like we are for these Parmesan Crusted Pork Chops, the brine will help the breading adhere to the surface of the pork a bit better than if you skipped the brine.

How long do you bake pork chops?

How long you bake your pork chops really depends upon the temperature of your oven and the thickness of your pork chop. Here’s a quick guide:

For oven temperature of 350 degrees

  • 1 inch or more of thickness = 35-40 minutes
  • less than 1 inch of thickness = 30 minutes

For oven temperature of 400 degrees

  • 1 inch or more of thickness = 25-30 minutes
  • less then 1 inch of thickness = 15-20 minutes

Be sure to check the internal temperature of your pork chops with an instant read thermometer. The internal temperature should be 145 degrees.

What can you serve with your Oven Baked Pork Chops?

I like to serve the roasted potatoes that are included in this recipe but we also love these easy side dishes along with it:

Now back to the star of the show, these Parmesan Crusted Baked Pork Chops with Roasted Potatoes are simple and easy to throw together. You can skip the brine process if you’re in a rush but I like to get it going the night before and let the pork chops brine overnight. They end up so tender and juicy that even if you do overcook them a bit the brine will totally help you out.

You can mix up the parmesan breading the day before, too, and keep it in a zip top bag. Dredge your pork chops in the breading and place them on a baking sheet with melted butter. Arrange the potatoes around the pork and pop in the oven. So, simple….you’ll be adding this one to the list of favorites that I hope is getting longer every day.

Ingredients

  • 1 cup low fat buttermilk
  • 1 tbsp lemon zest
  • 1 tbsp kosher salt
  • 1 tbsp black pepper
  • 1 tbsp chopped thyme
  • 4 bone in pork chops, 1 inch thick
  • 1 1/2 cups panko bread crumbs
  • 1/2 cup grated parmesan cheese
  • 1 tbsp dried parsley
  • 4 tbsp butter
  • 3 cups baby potatoes, cut in half
  • 1 red onion, cut into chunks
  • 1 tbsp olive oil

Instructions 

  • Whisk together the buttermilk, lemon zest, salt, pepper and thyme in a large bowl.
  • Place the pork chops in a heavy duty zip top bag and pour the buttermilk mixture over top. Press out the air and seal the bag.
  • Place the bag in a large bowl and store in the refrigerator for 1 hour or up to 24 hours.
  • Preheat oven to 400 degrees.
  • In a wide, shallow dish, whisk together the bread crumbs, cheese and parsley. Season with salt and pepper.
  • Put the butter in the center of a baking sheet and transfer the baking sheet to the oven to melt the butter, approximately 5 minutes.
  • While the butter melts, remove the pork from the brine. Discard the brine.
  • Dredge a pork chop in the bread crumbs by dipping each side and pressing down so the breading adheres to the surface of the pork. Transfer to a platter and repeat with the remaining pork chops.
  • Add the potatoes and onions to a large bowl. Pour the olive oil over the potatoes and toss to coat. Season with salt and pepper.
  • Remove the baking sheet from the oven and immediately arrange the pork on the baking sheet. Scatter the potatoes and onions around the pork chops. Transfer the baking sheet back to the oven and bake the pork chops for 25 minutes or until an instant read thermometer reads 145 degrees. (If your pork  chops do not look crispy and golden brown, turn on the broiler for 1-2 minutes to crisp up the crust.)
  • Cover the pork chops with foil and rest for 10 minutes.
  • Serve the pork chops immediately with the potatoes and onions.
