Bruschetta Chicken

Bruschetta chicken is a summery, fresh and flavorful dinner that I can’t get enough of… literally. I think I’ve made it three times in the last month! There’s just something about the way that those classic bruschetta flavors pair with tender, well-seasoned chicken that makes my mouth water.

The best part? This recipe really couldn’t be easier to make. It all comes together in less than 30 minutes. When you have weeknights that are as crazy as mine, you need easy recipes like this that you can count on! I also really love serving this chicken dish at summertime parties with friends.

The only hard part about this recipe is practicing self restraint. You’re going to want to eat the tomato mixture right out of the bowl! When you combine juicy red tomatoes with fresh garlic, salty capers, aromatic fresh herbs and oil, magic happens. Save it for topping the chicken with – I promise it’s worth the wait!

Ingredient Notes

Here are some quick notes about the ingredients you’ll need! For the exact measurements, keep on scrolling down to the recipe card.

  • Tomatoes – I like using plum tomatoes, but really any tomatoes will get the job done.
  • Red Onion – Do not swap this with any other color onion!
  • Capers – Make sure they’re well-rinsed and drained before adding to the other ingredients.
  • Garlic – Fresh garlic will taste and smell the very best. Avoid using pre-minced garlic if possible.
  • Fresh Herbs – They’re optional, but I LOVE adding some chopped parsley and basil to this recipe!
  • Olive Oil – Try to use a good quality olive oil that you really like the flavor of.
  • Salt and Pepper – Kosher salt (or flaky sea salt) and freshly cracked black pepper will create the very best flavor.
  • Chicken Breasts – I haven’t personally tested this recipe with chicken thighs. If you do choose to use thighs, make sure they’re boneless and skinless.
  • Seasonings – Besides salt and pepper, you’ll also need some garlic powder and Italian seasoning.
  • Mozzarella Cheese – Try to make sure it’s a good quality fresh mozzarella.
  • Balsamic Glaze – This is an optional ingredient that I really enjoy drizzling all over the chicken!

How to Make Bruschetta Chicken

Take a quick look at just how easy this recipe really is! For more detailed step by step instructions, keep on scrolling down to the recipe card.

  1. Make the tomato mixture. Add the tomatoes, onion, capers, garlic, parsley, basil, olive oil, salt and pepper to a bowl. Stir to combine.
  2. Prepare the chicken. Pat the chicken dry with a paper towel. Place it on a cutting board and slice it in half lengthwise. Mix all of the seasonings together, then sprinkle that all over the chicken on both sides.
  3. Cook the chicken. Heat oil in a skillet over medium-high heat. Cook the chicken in batches until golden brown on both sides and fully cooked.
  4. Assemble the dish. Top each chicken breast (all in the skillet) with a slice of mozzarella cheese. Let it sit for just long enough for the cheese to melt. Once that’s nice and melted, transfer all of the chicken breasts to a plate and top with the bruschetta topping. Sprinkle with parm and basil!

PRO TIP: I don’t recommend making the bruschetta topping ahead of time! It’ll get pretty watery the longer it sits. For the very best results, make the tomato mixture right before you cook the chicken.

Ingredients

  • 1 pound plum tomatoes, seeded and diced
  • 1/4 cup finely chopped red onion
  • 1 tablespoon capers, rinsed and drained
  • 1 garlic clove, minced
  • 2 tablespoons chopped parsley, optional
  • 2 tablespoons chopped basil, optional
  • 1 tablespoon extra virgin olive oil
  • Kosher salt
  • Fresh ground pepper
  • 3 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 6 slices fresh mozzarella cheese
  • Balsamic Glaze, optional
  • Basil sprigs, optional

Equipment

  • 1 skillet

Instructions 

  • In a medium bowl, add the tomatoes, onion, capers, garlic, parsley, basil, olive oil, salt and pepper. Stir to combine and set aside.
  • Pat the chicken dry with a paper towel and place on a flat cutting surface.
  • Cut the chicken breast in half lengthwise and set aside.
  • In a small bowl, whisk together the garlic powder, Italian seasoning, salt and pepper.
  • Sprinkle the seasoning evenly over both sides of each chicken breast.
  • Heat the oil in a large skillet over medium high heat.
  • Add the chicken to the skillet, working in batches, and cook the chicken until golden brown. Flip the chicken and cook on the opposite side for an additional 4-5 minutes or until almost cooked through. Repeat with the remaining chicken.
  • Arrange the chicken in the skillet and top each chicken breast with a slice of cheese. Cook the chicken until the cheese is melted.
  • Transfer the chicken to a platter and top with the bruschetta topping.
  • Sprinkle with parmesan cheese and fresh chopped basil.
  • Serve immediately.

Notes

Bruschetta topping is best if made right before serving but can be made in advance. The tomatoes will release their juice into the topping so be aware it may be more liquid-y the longer you wait.
Leftover Bruschetta Topping is great on toast, in scrambled eggs or mixed into salad dressing.
