Funfetti Sheet Cake

There’s nothing more fun than funfetti, right? I mean, it’s really just vanilla with the addition of sprinkles… But I swear, rainbow sprinkles make everything more delicious! With that being said, this sheet cake recipe would be a timeless staple with or without the sprinkles. Thanks to the perfect amount of buttermilk that’s mixed into the batter, this cake is the moistest, softest, and fluffiest sheet cake you’ll ever have. It doesn’t hurt that it’s so pretty to look at, of course!

To top it all off is sublimely sweet strawberry cream cheese frosting, which I could honestly eat all by itself with a spoon. You only need four simple ingredients to whip it up, and you’ll probably fight with your kids over who gets to lick the spoon! Of course, you also can’t forget the addition of sprinkles on top of the frosting to really sell that funfetti signature look.

When it comes to serving this cake, I think the best question to ask is “where shouldn’t I serve Funfetti Sheet Cake?” The list of occasions that wouldn’t be better with this cake is way shorter than the places you should be serving this cake at! Birthday parties seem the most obvious, but really any party is better with a Funfetti Sheet Cake. Plus, it serves about 18-20 people, depending on how you slice it. It’s perfect for serving a large crowd!

How to Make It

Prepare your kitchen. Preheat the oven to 350ºF and line a 9” x 13” baking pan with parchment paper.

Make the batter. In a large mixing bowl, add the flour, baking powder, bicarbonate of soda, salt and sugar. Whisk together to combine. Add the eggs, canola oil, buttermilk and vanilla extract and whisk until very smooth. Pour in the boiling water and whisk again until fully combined. Tip in the sprinkles and use a spatula to gently incorporate. The mixture will be very thin, this is normal!

Bake the cake. Transfer the cake mixture to the prepared baking pan. Bake in the center of the preheated oven for 30 minutes or until the cake is golden brown, shrinking away from the sides of the  pan slightly and feel springy when touched with your finger.

Cool. Leave the cake to cool in the pan before turning out onto a wire rack to frost.

Make the cream cheese frosting. Put the soft butter and cream cheese into a mixing bowl and beat on a low speed until smooth and combined. Add the powdered sugar and strawberry preserve (or strawberry extract if using) and beat until smooth and creamy. At this point, you can add a touch of pink food coloring if you would like the frosting to be a brighter shade of pink.

Frost the cake. Use a spoon to dollop the frosting on to the cooled vanilla sheet cake. Spread the frosting with an off set spatula into an even layer across the entire surface of the cake. Sprinkle with sprinkles, slice and enjoy!

Ingredients Notes for Funfetti Sheet Cake

  • Buttermilk – If you don’t have buttermilk, you can substitute it with sour cream or plain yogurt. Alternatively, you can make your own buttermilk by adding 1 tbsp white wine vinegar or lemon juice to 1 cup of milk.
  • Oil – Use a flavorless oil such as canola oil or vegetable oil. 
  • Strawberries – You can substitute the strawberry preserve with 1 tsp of strawberry extract. We have found strawberry preserve to give the most authentic and natural strawberry flavor. 
  • Color – The strawberry preserve will add a hint of pastel pink to the frosting. Feel free to add pink food coloring for a more vivid color. 
  • Frosting – If the frosting is too runny simply add more powdered sugar a tbsp at a time. If it’s too thick you  can add a splash of milk or heavy cream.

Ingredients

For the sheet cake
