Grilled Pork Chops

It’s summer, which to me, means it’s grilling season! Don’t worry though – this is a great pork chop recipe for making all year round. What really sends this recipe over the top is the marinade. It’s sweet, savory, a little bit tangy and infuses all of those flavors into the meat! Plus, the acid from the apple cider vinegar does more than just add flavor. It also helps make the meat nice and tender.

Besides marinating the meat, you’ll also be grilling these pork chops to perfection in just a few easy steps! I’ve included the essential steps for grilling pork chops below along with a few easy tips and tricks to help guarantee the best results every single time. This recipe is the definition of tried and true. My family gets pretty excited for grilled pork chop nights!

Pork chops often get a bad reputation for being dry or tough. However, this easy recipe really achieves the most tender and juicy results using two big keys. For starters, the marinade really does work wonders. Secondly, the easy as can be grilling process makes sure that the pork chops don’t get over-cooked and dried out. These really are the BEST grilled pork chops you’ll ever make!

How to Make Grilled Pork Chops

  1. Marinate the pork chops. Whisk all of the ingredients together in a bowl to combine Add the pork chops, cover, and marinate in the fridge for a minimum of 4 hours.
  2. Prepare the meat for grilling. Remove the pork chops from the marinade and season with a little salt and pepper on both sides. While you’re doing this, make sure your grill is preheating over medium high heat.
  3. Grill the pork chops. Place the pork chops on the grill. Cook for about 3-4 minutes. Once the meat easily releases from the grill gates, flip it and cook for another 3 minutes or so.
  4. Let them rest. This is SO important when grilling pork chops! To make sure they stay nice and juicy, allow the pork chops to rest for 10 minutes loosely tented with foil.

Tips for the Best Grilled Pork Chops

  • Use a meat thermometer. This is so important! You can check the doneness of the pork chops by inserting a meat thermometer into them. Once it reaches 135°F, the meat is fully cooked and safe to eat. Make sure you don’t over-cook the meat, otherwise it’ll get tough and dry out.
  • Let it marinate for at least 4 hours. Marinating the meat makes it both tender and flavorful as can be. If you skip this step or shorten it to less than 4 hours, you won’t get the intended results. Pork chops can marinate for up to 10 hours in an airtight container in the fridge.
  • Rest for 10 minutes. Do NOT slice and/or serve the pork chops as soon as they’re off the grill! Grilled pork chops will need about 10 minutes to rest, that way all of the juices in the meat have time to settle. Slicing into the meat too soon will result in drier pork chops.

How to Store Pork Chops

Once fully cooled to room temperature, transfer the grilled pork chops to an airtight food storage container and keep them stored in the fridge for about 3-4 days. I recommend reheating in the air fryer or oven, but the microwave also works!

Ingredients

For the Marinade:

  • 6 ounces Pineapple Juice
  • 1/2 cup Apple Cider Vinegar
  • 1/2 cup Olive Oil
  • 1/4 cup Worcestershire sauce
  • 1/4 cup Brown Sugar
  • 1 tablespoon Italian Seasoning
  • 1 tablespoon Garlic
  • 1 tablespoon smoked paprika
  • 1 tablespoon kosher salt
  • 1/2 tablespoon black pepper

For the Pork Chops:

  • 8 – 1/2 inch thick bone-in pork chops
  • 1/2 tablespoon kosher salt
  • 1/2 tablespoon pepper

Equipment

  • 1 grill or grill pan

Instructions 

  • Whisk all marinade ingredients together in a bowl or measuring cup.
  • Transfer to a large bowl or heavy duty zip top bag.
  • Add pork chops and marinade for 4 hours or overnight.
  • Heat a grill or grill pan over medium high heat.
  • Remove the pork chops from the marinade and season with salt and pepper on both sides.
  • Place the chops on the grill and cook until the pork chop releases easily from the grill grates, approximately 3-4 minutes.
  • Flip the pork chops and continue cooking on the opposite side for an additional 3 minutes or until an internal temperature on an instant read thermometer reaches 135˚F.
  • Rest for 10 minutes covered with foil.
  • Serve with steak sauce, honey dijon sauce or just all on their own.
