Tomato Basil Mozzarella Salad
Before we left for vacation #2, I stated to the entire family that I was not cooking dinner all week. I was nearly successful at attaining that goal, I only “assembled and heated” a few food items for dinner one night. Mission accomplished? Pretty close in my opinion.
That dinner consisted of pre made burger patties, corn on the cob and this awesome Tomato, Basil and Mozzarella salad. Nothing earth shattering by any stretch but simple, sweet chunks of tomatoes mixed with chopped basil and huge bites of fresh mozzarella cheese just sing summer. I dressed the salad with lemon and olive oil instead of my usual balsalmic dressing and it was definitely the right move.
I did leave vacation feeling like I didn’t fully take advantage of the huge and fully equipped kitchen at the beach house but I avoided doing a ton of dishes which was my primary goal. We still ate very well which was the most important thing because we are a family that lives to eat!
Tomato, Basil and Mozzarella Salad
Two large ripe tomatoes, cut into chunks
Two balls of fresh mozzarella (water packed), cut into chunks
Four tablespoons fresh basil, chopped
1/4 cup extra virgin olive oil
Combine the tomatoes, mozzarella and basil in a large bowl. In a small bowl, whisk together the lemon juice, olive oil, salt and pepper. Toss dressing gently with tomato mixture. Serve immediately.
