Balance, that’s what life is all about. There’s a Seinfeld episode (ok…I may be dating myself but let’s stay focused) when Jerry is talking about the balance amongst his group of friends. When one person is at a high….one is low. It’s all about balance. That’s kinda how I live. At least when it comes to my food. I constantly fight cravings….mostly sweet. And salty….and fatty. I’m constantly looking for ways to keep quick, healthy and easy snacks at the ready so I can curb my cravings….no matter what they may be. Kinda like my CopyCat Apricot Macadamia Kind Bars. (You should try those too, BTW.) This is that kind of snack. This is the kind of snack I would have stockpiled at the office when I worked outside the home. Now….I keep these little buggers in the fridge. My new problem….I have a hard time eating just one. And then not eating a burger later. Balance.

So simple to throw together….maybe not so simple to roll into little balls but clean hands were key here. I think I washed my hands every third ball. I didn’t want to use cooking spray or oil or butter, I was trying to keep things a little cleaner here. So, take a few seconds and wash up…then make more…then wash…then roll. You get it.

Filled with dried chewy cherries, crunchy pecans, powerful chia seeds, hearty oats, coconut, honey and peanut butter….and CHOCOLATE…these Energy Bites will provide you with plenty of fuel for a quick workout or a boost of energy for that mid-afternoon slump. You know that one where you just want to crawl under your desk with a pillow….George Costanza-style. Don’t be like George.

They may not be pretty but they sure are tasty, filling and satisfying. You may actually start to crave these Energy Bites and that, my friends, is a craving worth satisfying. Am I right?
No Bake Cherry Pecan Chia Energy Bites

Ingredients
- 3/4 cup rolled oats
- 3/4 cup unsweetened coconut flakes
- 1/2 cup dried cherries
- 1/2 cup chopped pecans
- 1/3 cup mini chocolate chips
- 1/3 cup natural unsalted peanut butter
- 1/4 cup honey
- 1/8 cup chia seeds
Instructions
- In a large bowl, combine all the ingredients until thoroughly incorporated. Chill the mixture in the refrigerator for 30 minutes.
- Using clean hands, shape approximately two tablespoons of the mixture into a ball and place on a baking sheet lined with parchment. Repeat the procedure until all the dough is used. Chill the energy bites in the refrigerator for 30 minutes.
- Transfer to an airtight container and store in the refrigerator for up to 1 week.
