Is there anything more delicious than baked brie? I’ll answer that now – no, I don’t think there is. Especially when that warm, gooey, melted brie is baked with sweet Fig Jam, all wrapped up nice and tight in puff pastry dough!
Once baked, the puff pastry acts as a flaky shell to the warm brie cheese and fig jam. After you slice into it and serve it with dippers like apples, bread, and crackers, it quickly becomes a party favorite. There’s just something so unforgettably good about the combination of sweet, sticky fig jam and creamy, buttery brie. When that’s all combined together in the middle of puff pastry dough?! Swoon.

How to Make Baked Brie
Baked brie, also known as brie en croute, is super simple to make.
- Heat it up! Preheat your oven to 350˚F.
- Slice. Slice off the top rind of the brie horizontally using a sharp knife. Only the top rind!
- Start assembling. Unfold the puff pastry and place the brie in the center of the puff pastry, cut side up.
- Make it sweet. Spoon the fig jam over the surface of the cut side of the brie to cover.
- Fold. Fold the puff pastry dough up over the brie to cover. Alternatively, you can cover the brie with the puff pastry and then tuck the edges underneath.
- Prepare to bake. Place the brie in the center of a parchment lined baking sheet and brush the surface with the egg.
- Bake. Bake for 30 minutes until golden brown and crispy.
- Rest. Let the brie rest for 10 minutes before serving.
- Enjoy! Serve with crackers, fruit and bread sticks, if desired.
Can I make baked brie with fig jam ahead of time?
This isn’t the best make-ahead recipe. Once baked, the brie stays warm and gooey for about 15-20 minutes, so it’s best when served fresh. However, you can assemble the appetizer and keep it in an airtight container in the fridge prior to serving for about 24 hours to help keep your day stress-free.
What brand of cheese is best?
When it comes to brie cheese, I really haven’t met a wheel that I didn’t love. With that being said, try to choose a wheel that’s of good quality, that way your final product will be wonderfully decadent and rich with that signature buttery brie flavor.
Variations on Baked Brie
I like this baked brie with fig jam just the way it is, but there are some holiday-friendly additions you can toss into the mix if you’re so inclined! A thin layer of chopped pecans on top of the fig jam will provide a nice added crunch, and a sprinkle of fresh rosemary on the jam will create a great aromatic element to the entire dish.
You could even swap out the fig jam for Pumpkin Butter or Apple Butter.
