This easy Chicken Chile Verde recipe is made with juicy chicken thighs simmered in a homemade green chile sauce of roasted tomatillos, poblanos, jalapeño, garlic and cilantro. It’s bright, slightly smoky, tangy and flavorful without being overly spicy.
It’s ready in about an hour and is fantastic with tortillas, rice or your favorite Mexican-inspired toppings.

What Is Chile Verde?
Chile Verde literally means green chile, but when you see it on a menu it usually refers to tender meat simmered in a savory green sauce.
The signature green color and tangy flavor often come from a combination of tomatillos and green chile peppers.
Traditional versions are frequently made with pork, but Chicken Chile Verde is a faster option that’s perfect for an easy dinner. Boneless chicken thighs become incredibly tender without requiring hours of simmering.
And this isn’t quite the same thing as green chicken chili. There are no beans or heavy chili-style broth here. This recipe is all about tender shredded chicken coated in that bright, rich tomatillo chile verde sauce.

Ingredients For Chicken Chile Verde
The full measurements are in the recipe card below, but here’s what you’ll need and where you can make a few swaps.
- Chicken Thighs – Boneless, skinless chicken thighs are my favorite because they stay juicy and become fork-tender quickly. Chicken breasts will work, but keep an eye on them because they can dry out more easily.
- Tomatillos – The backbone of your chile verde sauce. Remove the papery husks and rinse the tomatillos well because they can be a little sticky. Fresh tomatillos give you the best bright, tangy flavor. Canned tomatillos can work in a pinch, although you’ll miss some of that roasted flavor.
- Poblano Peppers – Mild poblanos add earthy chile flavor and just a touch of heat. Anaheim peppers are a good substitute if poblanos aren’t available.
- Jalapeño – One jalapeño gives the sauce a little kick without taking over. Remove the seeds for a milder Chile Verde or swap in a serrano if you want more heat.
- Onion and Garlic – Yellow onion adds sweetness as it roasts. White onion works just as well. Fresh garlic is best here because it gets sweet and mellow under the broiler.
- Chicken Stock – Chicken Stock adds savory flavor and loosens the sauce so the chicken can simmer. Chicken broth works, too.
- Cumin and Oregano – Just enough seasoning to add warmth without overpowering the fresh green sauce. Mexican oregano is fantastic if you have it, but regular dried oregano works perfectly.
- Cilantro – Fresh cilantro gives the sauce its signature freshness. If you aren’t a cilantro fan, you can reduce the amount, although I wouldn’t leave it out completely if you can help it.
- Lime – Stirred in at the end so that citrus flavor stays bright and fresh.
- Olive Oil – Used for browning the chicken. Avocado oil or another neutral high-heat cooking oil works, too.
For serving, I love avocado, cilantro, cotija cheese, sliced jalapeños, sour cream, green onions and lots of lime wedges.

How to Make Chicken Chile Verde
This is essentially a roast, blend and simmer situation, which is exactly the kind of recipe I like on a busy night.
- Roast the vegetables. Arrange the tomatillos, poblanos, jalapeño, onion and garlic on a baking sheet and broil until everything begins to soften and you see browned, blistered spots developing. That little bit of char is where the good stuff happens.
- Steam and peel the poblanos. Transfer the hot poblanos to a bowl and cover them for a few minutes. The trapped steam helps loosen the skin so you can peel it away easily. Remove the stems and seeds.
- Blend the green chile sauce. Add the roasted vegetables to your blender with some chicken stock, cumin, oregano, cilantro and salt. Blend until mostly smooth. It should be vibrant green with a thick, pourable consistency.
- Brown the chicken. Pat the chicken thighs dry before seasoning them so you get better browning. Sear them in a hot Dutch oven until golden around the edges. They don’t have to be cooked through yet.
- Cook the chile verde sauce. Pour the blended sauce right into the same pot. Let it bubble for a few minutes while you scrape up all those browned bits from the bottom. The sauce will deepen slightly in color and smell extra roasty and savory.
- Simmer. Add the remaining stock and return the chicken to the pot. Keep it at a gentle simmer until the chicken is tender enough that it practically gives up when you touch it with a fork.
- Shred the chicken. Transfer the thighs to a cutting board, shred them into bite-size pieces and stir everything back into the green chile sauce.
- Thicken. Simmer uncovered until the sauce reduces slightly and clings to the chicken.
- Finish with lime. Stir in fresh lime juice just before serving. Taste and add another pinch of salt, squeeze of lime or handful of cilantro until the flavors really pop.
Kellie’s Tips for the Best Chicken Chile Verde
A few little things make a big difference here.
- Get some color on the vegetables. You’re not looking to incinerate them, but browned and blistered spots give your Chile Verde a deeper, slightly smoky flavor.
- Don’t skip rinsing the tomatillos. Once you remove the husks, the fruit underneath will feel sticky. A quick rinse takes care of it.
- Let the poblanos steam. Covering them for just a few minutes makes peeling the loose skin so much easier.
- Pat the chicken dry. Wet chicken steams instead of browns, and those browned bits in the bottom of the pot add a ton of flavor to your sauce.
- Brown in batches if necessary. Crowding the pot drops the temperature and makes it harder to get that nice golden sear.
- Use chicken thighs when you can. They are much more forgiving than chicken breasts and stay tender during the simmer.
- Control the heat with the jalapeño. Removing the seeds will keep things fairly mild. Leave some seeds behind or add another pepper if you like your Chile Verde spicy.
- Let the sauce reduce. If your sauce looks a little thin after shredding the chicken, give it another few minutes uncovered.
- Add the lime last. Long cooking dulls fresh citrus flavor. Stirring it in right before serving keeps everything bright.

Is Chicken Chile Verde Spicy?
This version is flavorful but not aggressively spicy.
Poblano peppers are generally mild, so most of the heat comes from the jalapeño. Remove the seeds and membrane from the jalapeño for a milder Chicken Chile Verde.
Want it hotter? Leave the seeds in, add a second jalapeño or use a serrano pepper.
What to Serve with Chicken Chile Verde
Chicken Chile Verde can easily be a complete dinner with nothing more than a stack of warm tortillas, but I rarely stop there.
Try serving it with:
- Warm corn or flour tortillas
- Mexican rice
- Cilantro lime rice
- Black beans or refried beans
- Avocado or guacamole
- Cotija cheese
- Sour cream or Mexican crema
- Fresh cilantro
- Sliced jalapeños
- Green onions
- Lime wedges
- Tortilla chips
You can also spoon the chicken and sauce into tortillas for quick Chile Verde tacos.
And definitely don’t overlook the leftovers. Stuff the chicken into burritos, pile it onto tostadas or turn it into a very impressive plate of nachos.

How to Store Chicken Chile Verde
Chicken Chile Verde is a great make-ahead dinner because that green chile sauce continues to develop flavor as it sits.
- Refrigerator: Allow the Chicken Chile Verde to cool, then transfer it to an airtight container. Refrigerate for 3-4 days.
- Freezer: Freeze the cooled chicken and sauce in an airtight freezer-safe container for up to 3 months. I like to freeze it in individual portions for quick lunches and dinners.
- Reheating: Warm gently in a saucepan over medium-low heat until hot. If the sauce has thickened in the refrigerator, stir in a splash of chicken stock or water. You can also microwave individual portions until warmed through.
For the best flavor, add a fresh squeeze of lime and a little cilantro after reheating.

Chicken Chile Verde Recipe

- 2 pounds boneless, skinless chicken thighs
- 1 1/2 teaspoons kosher salt, divided
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon olive oil
- 1 1/2 pounds tomatillos, husks removed and rinsed
- 2 poblano peppers
- 1 jalapeño pepper
- 1 medium yellow onion, quartered
- 4 garlic cloves, peeled
- 1 cup chicken stock, divided
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 cup fresh cilantro leaves
- Juice of 1 lime

Instructions
- Roast the vegetables. Preheat the broiler. Arrange the tomatillos, poblanos, jalapeño, onion and garlic on a rimmed baking sheet. Broil for 7-10 minutes, turning the peppers halfway through, until the vegetables have softened and are lightly blistered and charred.
- Prep the peppers. Transfer the poblanos to a bowl and cover for about 5 minutes. Peel away any loose skin, then remove the stems and seeds. Remove the jalapeño stem and, for a milder sauce, discard the seeds.
- Make the chile verde sauce. Add the roasted tomatillos, poblanos, jalapeño, onion and garlic to a blender. Add 1/2 cup chicken stock, cumin, oregano, cilantro and 1/2 teaspoon salt. Blend until mostly smooth.
- Brown the chicken. Pat the chicken thighs dry and season with the remaining salt and black pepper. Heat the olive oil in a Dutch oven or heavy-bottomed pot over medium-high heat. Brown the chicken for about 3-4 minutes on each side. Transfer to a plate.
- Cook the sauce. Pour the blended chile verde sauce into the same pot. Cook for 2-3 minutes, stirring occasionally and scraping the browned bits from the bottom of the pan.
- Simmer the chicken. Stir in the remaining 1/2 cup chicken stock. Return the chicken and any juices from the plate to the pot. Bring to a gentle simmer, reduce the heat to medium-low and cover. Cook for 20-25 minutes, until the chicken is tender and cooked through.
- Shred. Transfer the chicken to a cutting board and shred or pull it into bite-size pieces with two forks. Return the shredded chicken to the pot.
- Thicken the sauce. Simmer uncovered for another 5-10 minutes, stirring occasionally, until the sauce has reduced slightly and coats the chicken.
- Finish and serve. Stir in the fresh lime juice. Taste and adjust with additional salt, lime or cilantro, if desired. Serve warm with tortillas, rice and your favorite toppings.
Notes
- For milder Chicken Chile Verde, remove the seeds and membrane from the jalapeño before blending.
- For more heat, leave the jalapeño seeds intact or add a serrano pepper.
- Boneless, skinless chicken breasts can be substituted, but begin checking them earlier because they can dry out more quickly than thighs.
- If the finished chile verde is thinner than you’d like, simmer uncovered for a few additional minutes.
- Leftovers can be refrigerated in an airtight container for 3-4 days.
- Freeze Chicken Chile Verde for up to 3 months. Thaw overnight in the refrigerator and gently reheat on the stovetop.
- Add another squeeze of fresh lime after reheating to brighten the sauce.

Can I use chicken breasts for Chicken Chile Verde?
Yes. Boneless, skinless chicken breasts can be substituted for the thighs.
Chicken breasts are leaner, so check them a little earlier and avoid simmering them longer than necessary. You want the chicken tender enough to shred without becoming dry.
Can I make Chicken Chile Verde ahead of time?
Absolutely. This is actually one of those recipes that reheats really well.
Make it a day ahead, refrigerate it and gently reheat it on the stovetop. Add fresh lime juice and cilantro before serving to wake the flavors back up.
Can I make Chile Verde without a blender?
A food processor works just as well.
You can also use an immersion blender, although the sauce may end up with a slightly more rustic texture.
What if my Chile Verde sauce is too thin?
Simmer it uncovered.
Once the shredded chicken goes back into the pot, let everything bubble gently for another 5-10 minutes. As the extra liquid evaporates, the sauce will become thicker and cling to the chicken.
