I don’t know about you but I’m counting down the minutes until the last day of school. I’m definitely ready for a more leisurely pace during the warmer months. I love to grill quick and easy dinners so clean up is a breeze but there are some days that I don’t even have time to cook a thing. That’s when I stop off at my local ACME Markets store to grab a few items and make a dinner that looks like it took all day long to create….but is ready in just a few minutes!

Creating a few flavor enhancing toppings for the Barbecue Pork Rib Tacos was a breeze using ACME Markets’ Signature brand products. Get the Recipe: Barbecue Pork Rib Tacos
Ingredients
- 1 rack Signature Cafe Pork Ribs
- 1 cup shredded green cabbage
- 1 cup shredded red cabbage
- 1/2 cup shredded carrot
- 1/4 cup fresh chopped cilantro
- 1/4 cup fresh lime juice
- 3 tablespoons apple cider vinegar
- 3 tablespoons honey
- 1/2 teaspoon kosher salt
- 1/2 teaspoon fresh ground pepper
- 3/4 cup Signature Kitchens Mayonnaise
- 1/2 cup Signature Kitchens Southwestern Style Mustard
- 1 cup Signature Kitchens Black Beans, drained and rinsed
- 1 cup cooked corn kernels
- 1/4 cup finely diced red onion
- 8 Signature Kitchens Flour Tortillas
- Fresh cilantro, for garnish
- Lime wedges, for garnish
Instructions
- Heat the Signature Cafe Pork Ribs according to package instructions. Allow to cool enough to handle.
- Using a sharp knife, carefully cut the meat from the rib bones and roughly chop into bite sized pieces. Set aside.
- In a medium bowl, toss together the green cabbage, red cabbage and cilantro to combine.
- In a small bowl, whisk together the lime juice, vinegar, honey, salt and pepper. Pour the dressing over the cabbage and toss to combine. Set aside.
- In a separate bowl, whisk together the mayonnaise and mustard until smooth. Set aside.
- In a medium bowl, stir together the black beans, corn and red onion. Set aside.
- Carefully char a tortilla over a grill or gas burner until lightly toasted. Repeat with remaining tortillas until done.
- Divide the pork evenly between each tortilla. Top each with 2 tablespoons slaw, 2 tablespoons black bean relish and drizzle with the mustard.
- Serve immediately sprinkled with additional chopped fresh cilantro and lime wedges, if desired.

I made my ribs in my toaster oven & they turned out perfect. The secret is to cook them in a roasting pan in an airtight aluminum sheet. First you cook it with the dry rub. After baking it for about 3 hours remove the aluminum & put on sauce & put it under the low broiler for about 12 minutes.
Sounds delicious!
We had a company lunch and 2 racks of ribs were left. This was the perfect recipe for the leftovers

I found this page after making BBQ spare rib tacos yesterday, using some BBQ ribs and cole slaw that were left over from the weekend. They were spectacular! So I figured someone must have done that before, and I looked online to see. Yep. No recipe needed, just cut the rib meat from the bone and cube into smaller pieces, add some additional sauce, nuke in the microwave for 30 sec or so, put in a tortilla and top with slaw (which you probably have leftover from the rib dinner). How did it take me 60 years to think of this?
It’s one of my favorite ways to use up leftovers!

I had leftover ribs that I smoked for seven hours yesterday. So, when my wife reminded me that it was Taco Tuesday, I knew I had to use them for tacos tonight.
I’ve made some pretty mean tacos in the past, but I can honestly say that these were the best I’ve ever made. I’ve only had one taco ever that was better than this, a Korean style taco from a food truck in Erie, PA.
Other than that, a big it in our house is to brown ground pork and add in about a cup of salsa verde (Wegman’s brand if you can get it) and let it simmer for about 10-15 minutes on low heat. Then add avocado, feta, cilantro. Quick, easy and awesome!

This was so good! I needed a way to use up leftovers and this was perfect. I used leftover grilled ribs, leftover cabbage and the slaw was really good with the honey. I subbed black beans for some cannellini beans since I had an opened can that also needed to be used up. And I took a southwest chipotle mayo I had on hand, but added some honey, lime juice, and a splash of water to thin it into a crema sauce. I will definitely use this recipe again!
