Broccoli Cheese Casserole

Whether you serve it as a side dish or an entree, this easy to make broccoli cheese casserole is sure to be a huge hit! If you love all of the flavors of Broccoli Cheddar Soup, then you’re going to obsess over this quick casserole. It’s rich with cheddar cheese, but what makes it so creamy is all the cream cheese in the mix too! Not to mention, there are also plenty of seasonings that keep this casserole decadent and delish.

When there’s a potluck coming up, this is my favorite dish to turn to! I love the amount of compliments I always get when I serve this warm, cheesy casserole.

I think it’s always such a hit because of the simplicity of it – I mean really, who doesn’t love the classic combo of cheese and broccoli? Besides just potlucks, this casserole is also the star of the show when I serve it as part of my weeknight dinners.

When I put this casserole on my little one’s plate, it’s one of the only times they don’t complain about having to eat vegetables!

Even the pickiest of picky eaters will love this tender broccoli that’s smothered in decadent, creamy cheese. Plus, the buttery, crispy layer of cheese on top is positively to die for. It’s like the cherry on top of a perfect sundae!

How to Make Broccoli Casserole

  1. Prepare. Preheat oven to 350˚F. Coat a 3 quart baking dish with cooking spray and set aside.
  2. Boil. In a large skillet, bring 1 inch of salted water to a rolling boil.
  3. Steam the broccoli. Add the broccoli, cover and steam over high heat until crisp-tender, approximately 2-3 minutes. 
  4. Drain. Drain the broccoli and transfer to a large bowl.
  5. Combine. In a medium bowl, combine the cream cheese, sour cream, milk, 2 tablespoons melted butter, 1 cup cheddar cheese, parmesan, garlic powder, onion powder, cayenne, salt and pepper until well combined.
  6. Stir. Pour the cream cheese mixture over the broccoli and stir to combine.
  7. Sprinkle. Transfer the broccoli mixture to the baking dish and sprinkle with the crushed crackers. 
  8. Top it off. Pour the remaining two tablespoons of butter over the casserole and top with the remaining cheddar cheese.
  9. Bake. Bake the casserole in the oven for 20-25 minutes until bubbly and golden brown.
  10. Rest. Remove from the oven and rest for 5-10 minutes.
  11. Enjoy! Serve immediately, and enjoy!

How To Store Leftover Broccoli Casserole

In an airtight container in the fridge, this cheesy veggie-packed casserole will stay fresh for up to 3 days. Reheat it in the microwave for a quick snack, but it’s even better when reheated in the oven! That way, the broccoli will stay tender, but it won’t lose it’s consistency like it might in the microwave.

How To Freeze Broccoli Casserole

Make sure the casserole is cooled to room temperature, then store it with an airtight lid. Keep it in the freezer for up to 3 months. When you’re ready to serve it, allow it to once again adjust to room temperature, then bake as instructed.
