Grilled Ribeye Steak

When I think about wanting to seriously surprise and delight my dinner guests, two dishes usually come to mind before all others – steak and lobster! And as much as I love lobster, this grilled ribeye steak with garlic butter sauce has been known to garner even more attention and compliments than my favorite shellfish. There’s just something amongst meat eaters that lights our souls on fire when a perfectly grilled steak is smothered in a sauce made with herbs, lemon juice, garlic and salted butter!

Just like lobster, ribeye steaks are sadly not known for their affordability. However, that price point seriously pays off when you follow my simple grilling instructions and drizzle the meat with this homemade sauce. Sometimes, you just need to treat yourself to the deliciously indulgent dinner that you deserve, and this is the recipe to do so with! Also, keep in mind that while a ribeye steak may not be the cheapest cut of meat, you’ll still be saving a ton of money by making this steak at home and not paying for it at a steakhouse. Plus, it’s just as tasty as those expensive steakhouse menu items – I promise!

How to Make Ribeye Steaks

  1. Preheat. Start by preheating your grill to high heat.
  2. Prepare the steaks. Before cooking, allow the steaks to come to room temperature for about 30 minutes. This helps the steak cook evenly while grilling. Place the steaks on a platter and drizzle with olive oil on both sides. Season with salt and pepper, liberally, on both sides.
  3. Grill. Transfer the steaks to a hot grill and cook for 4-5 minutes on each side for medium-rare, I like to remove them once they read around 130˚F on an instant read thermometer.
  4. Rest. Transfer the steaks to a platter and cover with foil. Allow to rest for 10 minutes.
  5. Make the sauce. While the steak is resting, make the garlic herb butter by melting the butter in a small saucepan over medium heat. Turn the heat to low and stir in the garlic. Cook for 1-2 minutes. Remove from the heat. Stir in the lemon juice and herbs.

Serving Suggestions

There are SO many delicious side dishes to pair with this perfectly grilled ribeye with garlic butter sauce! For a heavier side, consider making Roasted Garlic Mashed Potatoes, as that will pair perfectly with the garlic butter sauce! While you have the grill fired up, you could also make some delicious Grilled Asparagus in Foil as well. For a lighter fare, you could always just toss up a side salad. With an entrée this good, make sure you accompany it with a great side dish!

Dressed Up Garlic Butter Sauce

Don’t mess with perfection, folks. This garlic butter sauce can’t be beat! However, if you’re really set on adding more ingredients to it, consider tossing in some herbs like basil or oregano for a bit more of an earthier flavor. Also, remember to use freshly minced garlic and freshly squeezed lemon juice for the best flavors. Bottled and jarred lemon juice and pre-minced garlic are shortcuts that aren’t worth taking here!
