Ready in just a few minutes and no baking required, Lemon Meringue Cheesecake Parfaits are a great spring and summer dessert for any occasion. Light as air and super easy to make, this is a great recipe for the kids to make themselves!
Hey! It’s Friday!!! Yay! You have no idea how happy that makes me. The week has finally come to an end and I can sit back with my feet up all weekend long. Cocktail in hand, Netflix on the television, silence in the air. Ha ha ha ha!!! That was funny, who am I kidding? I’m a mom. There will be no silence, the only thing on Netflix will be Octonauts, Curious George or Minions. And that cocktail….well, that will happen but usually waaaaay later in the evening when I’m wrangling my little guy to bed. And, as usual, I’ll be working. But Mother’s Day is coming soon and that’s the one day of the year that I DEMAND a day off. No dishes, no laundry, no cleaning, no cooking and absolutely, positively no screaming. None. Mother’s Day is my day. And you will do it my way. And again, I’m laughing at myself because I think every year that whole scenario lasts about 37 seconds.
But anyway, it is a great time to spend with your mom or with your kids or for those that don’t have children…yet…practice for your perfect Mother’s Day scenario. Mother’s Day should be a celebration of all moms, moms-to-be and moms-at-heart. And it’s important to take the time to honor anyone in your life who has been like a mother to you. A little celebration of that mom in your life that you love so much you want to feed her all the good things, let her kick her feet up with a drink in hand and watch Netflix all day. And you definitely want to make a splendid dessert for her to enjoy…..in silence. 🙂 Like these super easy Lemon Meringue Cheesecake Parfaits. Even if you don’t know how to turn on a stove or work an oven you can easily make these.
These Lemon Meringue Cheesecake Parfaits are NO BAKE! That’s right, no baking required. You’re going to get some help from my friends Sara Lee and Cool Whip to layer your dessert in little jars with a bit of Lemon Curd. If you don’t feel like making this super, incredibly easy and tasty lemon curd you can definitely buy a jar at the store. I won’t judge. I found the base for my parfait at Walmart in the form of a Sara Lee Frozen Dessert Cheesecake and a tub of Cool Whip Whipped Topping. Sara Lee and Cool Whip are trusted brands that offer a delicious and simple way to make Mom feel special. I always keep a Sara Lee dessert and Cool Whip Whipped Topping in my freezer so I’m prepared for easy entertaining or snacking at any time.
I made short work of the entire cheesecake by flipping it on it’s top onto a plate and using the graham cracker crust for the base of the Lemon Meringue Cheesecake Parfait. Then I scooped out some of the cheesecake for the next layer. A spoonful of Lemon Curd was smoothed over the cheesecake and then I whipped some vanilla extract into the Cool Whip Whipped Topping to give it a fresh new flavor before topping the lemon curd layer with a cloud of my now flavored Cool Whip. Repeat….then eat. 🙂 It’s the most refreshing dessert I’ve ever tasted….like a big burst of sunshine in your mouth. And so incredibly easy your kids can do it. They’re great for Mother’s Day and perfect for any spring or summer event!
Get the Recipe: Lemon Meringue Cheesecake Parfaits
Ingredients
- 1 Sara Lee Original Cream Classic Cheesecake, thawed according to package
- 1 cup Lemon Curd
- 1 8 ounce tub Cool Whip Whipped Topping - Original
- 1/2 teaspoon vanilla extract
Instructions
- Turn the cheesecake out upside down on a plate or platter.
- Carefully remove the bottom crust and divide among four 1/5 liter jelly jars.
- Top the crust with 1 heaping tablespoon of cheesecake filling and level with a spoon.
- Top the cheesecake layer with 1 tablespoon lemon curd and level with a spoon.
- Top the lemon curd with 1 heaping tablespoon Cool whip.
- Top the Cool Whip layer with another cheesecake layer, lemon curd and then top with a dollop of Cool Whip.
- Refrigerate for up to 6 hours or serve immediately.
