I love McDonald’s. I do. I know it’s bad but I love everything about it. Feel free to give me the lowdown on how bad their food is for me but I love the Quarter Pounder with Cheese…the Filet o’ Fish, the fries, the apple pies, the milkshakes, the fries, the Double Cheeseburgers, the fries. You get the picture. I, especially, love their breakfast sandwiches. All of them. Every.Single.One.
My favorite is the Egg McMuffin because it’s relatively healthy as far as fast food goes but you can make it even better at home! And it’s so easy to do.
What I love most about these Homemade Egg McMuffins is that they’re the best egg breakfast sandwich to make and freeze for busy mornings on the go. You can make a big batch of egg and cheese sandwiches just the way you like them…with bacon, without bacon or even with a sausage patty.
Freeze them in individual freezer bags and make the entire family happy every day of the week. Doesn’t that sound dreamy?
How To Make Homemade Egg McMuffins
These easy Freezer Breakfast Sandwiches are exactly what you get in an Egg McMuffin….perfectly round egg, cheddar cheese, Canadian bacon piled high on an English Muffin.
- Cook the eggs in a jumbo muffin tin or use a round ramekin if you have them.
- Spray the inside with cooking spray and give the eggs a little whisk to break up the yolk a bit.
- Allow the eggs to cool and remove them from the muffin tin or ramekin.
- Assemble the sandwich on an english muffin and wrap individually with plastic wrap.
- Place your individually wrapped sandwiches in a zip-top freezer bag and write the cooking instructions on the outside of the bag.
- Transfer to the freezer and wait for breakfast.

How To Reheat Breakfast Sandwiches
When you’re ready to eat your egg McMuffin, unwrap the sandwich from the plastic wrap and wrap in a paper towel.
- Heat in the microwave for 30 seconds on a microwave safe plate.
- Flip the sandwich and heat for another 30 seconds or until warmed through.
- Eat immediately.
If you prefer to toast your breakfast sandwich, you can wrap in foil and heat in a toaster oven at 325˚ until warmed through.

Ingredients
- 6 large eggs
- kosher salt
- fresh ground pepper
- 6 english muffins, split in half
- 6 slices canadian bacon
- 6 slices cheddar cheese
Equipment
- 1 muffin pan
Instructions
- Preheat oven to 350 degrees.
- Coat a jumbo muffin tin with cooking spray and crack one egg in each well. Lightly whisk each egg with a fork. Season with salt and pepper.
- ransfer the muffin tin to the oven and bake for 8-10 minutes or until the egg is firm. Remove from the oven and allow to cool.
- Assemble the sandwich by layering the bottom half of the english muffin with a slice of canadian bacon, one egg round, a slice of cheese and top with the other half of the english muffin.
- Wrap tightly in plastic wrap and set aside. Repeat with the remaining muffins, bacon, egg and cheese.
- Once all the sandwiches are assembled and wrapped, place them in a zip-top freezer bag and press out all the air before sealing.
- Write the heating instructions on the outside of the bag. (1-2 minutes on high in the microwave.) Transfer to the freezer.
- When ready to cook, remove one sandwich from the freezer bag and open one end of the plastic wrap. (So the sandwich doesn't steam and become soggy.)
- Heat the sandwich in the microwave for 1-2 minutes (start with 1 minute and then heat at 30 second increments until heated through). Remove from the plastic wrap immediately and serve.

Thank you! I prepped these last weekend and had them all week long. I was a little nervous after reading the comments about the sandwiches being soggy. What I did was put them in the microwave for 30 seconds, then I took the egg out and flipped the sandwich over microwaved it for another 30 seconds then I took it out and put the egg itself in the microwave for 30 seconds and then I put it all together and ate it! Delicious! No sogginess and it filled me up for the morning, thank you for sharing!

Does the bread get tough/rubbery from microwaving?
I haven’t had that experience, Chelsie. I guess it depends on the type of bread you use.
I made these this morning for a post-Christmas-but-my-house-is-still-full-of family breakfast. Obviously, there was no need to freeze this batch. They were delicious! I used a silicone jumbo muffin pan. That worked well for getting the eggs out, BUT the cooking time nearly doubled. I don’t use silicone pans, but this was all I could find. Is this typical to require that much extra time?
I think there is more cooking time involved when using silicone, however, it shouldn’t have been double. Maybe your eggs were larger than my “large” eggs?
Maybe. I’ll keep playing around with this. Just thawed the one egg muffin that was left from my first try. I’ll try wrapping it in a paper towel next time. Mine “steamed” even with the end opened wide. I think when I figure out how much time it takes in my microwave and switch to a paper towel, I’ll be good to go. Love the idea of breakfast in the freezer.
Can you use egg whites instead in the pan. Not sun rebid they cook the same
You can use egg whites only but please note the consistency may be a little different once they are frozen and thawed.

We made this on Saturday morning and they really set us up for the day. Much tastier than McD’s.
I love these. I tend to get bored easily so I make them different every time. I use bagel thins so I make the eggs in a whoopee pan. I also hate loosing cheese when reheating, so I found cutting the cheese up and putting it in the egg before baking keeps it in the sandwich. If frozen, 90 seconds on high in a papertowel. Works perfect!

We love this recipe! I made a double batch, and my family(especially my teenage son) enjoyed the ease of heating up such a delicious breakfast on busy mornings. They’re also handy to have for a quick dinner when rushing out the door to hockey! I also lightly toasted the English muffins, and used Black Forest ham slices, as that’s what I had on hand. Next time I make them, I’m going to make more, and enlist the help of my kids, so the assembly process goes a lot faster . Thank you!

Just made these tonight for dinner. I used spam instead of Canadian bacon, Delicious! I don’t know if I’ll ever have time to make enough to freeze (family of 6), but it made a great dinner on the fly.
I never would have thought to use Spam….I had a bad Spam experience when I was younger so I’m not sure about it. But I’m glad your family loved it!

I made these last weekend and my son heated one up today. Smelled very good but he said the egg was still frozen when in fact it was not, just super hard from over cooking. I am going to try using my pampered chef egg cooker next time.
Looking for comments pertaining to cooking bacon…I don’t cook bacon before the sandwich goes in microwave frozen??
Canadian Bacon doesn’t need to be cooked in a pan before the sandwich is assembled. Essentially, it’s already cooked and will be cooked when the sandwich is heated in the microwave. If you prefer, you can cook the bacon in a skillet for 1-2 minutes.
I don’t have a jumbo muffin tin, so I’m going to try cookie cutters. I want to make them for my brother’s lunch, so he’ll have a warm breakfast.
You could also use a regular muffin tin but your eggs will need to bake a bit longer and won’t fit the muffin exactly. If you’re going to put the egg in the cookie cutter on a baking sheet I would heat the baking sheet and cookie cutters before adding the eggs so they don’t run out the bottom. If you already found a better way to do it….please share! 🙂
My husband got bagels instead of English muffins and it works great too. I use wax paper add all to freeze and then hit the micro in the am perfect..
