Spring Mix Salad

I may have outdone myself with this one, guys. If you know me, you know that I love a good salad! Especially now that we’re slowly inching our way out of colder weather and welcoming the sunshine again, I can’t get enough of all my favorite leafy greens. My current favorite (bordering on obsession) is this simple, yet stunning spring mix salad.

Have you ever looked at a bag of spring mix sitting in your fridge and thought… what now? I’ve been guilty of spring mix murder before. You know, when you let it sit in your produce drawer for way too long and you have to toss it out because it went bad? Well, I’ll never find myself in that situation again with this recipe!

Red onions, tomatoes, blue cheese, nuts and pickled radishes create the best combo of varying flavors and textures in this leafy salad recipe. Tying it all together is the salad dressing that’s equal parts sweet and tangy! It features ingredients like dijon mustard, honey, apple cider vinegar and blue cheese. This summer salad recipe really is anything but bland.

Ingredients

For the salad

  • Spring Mix – This usually includes leafy greens like lettuce and spinach.
  • Red Onions – Try to slice them thinly. You don’t want big chunks of onions.
  • Cherry Tomatoes – Grape tomatoes also work just as well.
  • Blue Cheese Crumbles – You can swap this cheese with feta crumbles if preferred. Just note that there’s a big difference in flavor.
  • Nuts – Feel free to use almonds or walnuts, whichever you prefer.
  • Pickled Radishes – Check out my recipe for quick pickled radishes! They’re so easy to make.

For the dressing

  • Dijon Mustard – Do NOT swap this with regular yellow mustard! Save that for your hot dogs.
  • Apple Cider Vinegar – This creates the best balance of sweet and tangy flavors that compliment the rest of the ingredients perfectly.
  • Honey – You can add more or less to control the amount of sweetness in the dressing.
  • Blue Cheese Crumbles
  • Extra Virgin Olive Oil – Try to use a good quality olive oil. It’ll have a big impact on both the flavor and emulsified consistency of the dressing.
  • Salt and Pepper – Add more or less to taste.

How to Make Spring Mix Salad

  1. Top it off. I like to spread the spring mix greens on a large platter. You can use a large bowl if preferred. Top off the greens with your onions, tomatoes, blue cheese, nuts and pickled radishes.
  2. Make the dressing. This part is so easy! And once you start making your own salad dressing at home, be warned… you’ll never go back to the store-bought stuff again. Simply combine all of the ingredients in a small bowl.
  3. Drizzle. Drizzle that gorgeous homemade salad dressing all over your salad. Serve immediately and enjoy!
  4. PRO TIP: Making this salad ahead of time? Don’t pour the dressing on top until you’re just about to serve it. If it sits on the salad for too long, the acidity and liquid from the dressing will cause the ingredients to soften.

Ingredients

  • 6 cups spring mix salad blend
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, sliced
  • 1/2 cup blue cheese crumbles
  • 1/2 cup chopped walnuts
  • 1/2 cup pickled radish
  • 1/2 cup croutons

Dressing:

  • 1 tablespoon dijon mustard
  • 1/3 cup apple cider vinegar
  • 1 tablespoon honey
  • 1 tablespoon blue cheese crumbles
  • 1/3 cup extra virgin olive oil
  • Salt and pepper, to taste

Equipment

  • 1 salad bowl

Instructions 

  • Arrange the salad blend in a large bowl or on a platter.
  • Top with the red onion, tomatoes, cheese, walnuts radish and croutons.
  • In a small bowl whisk together the dressing ingredients until just combines.
  • Pour the dressing over the salad or serve along side.
  • Serve immediately.

Notes

Blue Cheese Vinaigrette can be made up to 5 days in advance. Store in the refrigerator sealed in an airtight container. Allow to come to room temperature before dressing the salad.
