Buffalo Chicken Stromboli

I love a recipe that can double as a party food and as an easy weeknight dinner! Buffalo Chicken Stromboli can be served on a normal Tuesday night at the dinner table, or as a party food when you and your friends are watching the big game.

No matter how you slice and serve your stromboli, it’s sure to satisfy! After all, who doesn’t love buffalo chicken, cheese, and ranch all rolled up in pizza dough?!

Just in case you haven’t caught on yet, I should say again that this recipe is SO easy to make. You just have to roll out your pizza dough, slather on the fillings, roll it up and bake.

In just about half an hour, you’ll have a ready to slice Buffalo Chicken Stromboli that you’ll love devouring! Every bite is flavor packed and comforting, which makes it ideal for a chilly fall or winter evening.

When I say flavor packed, I really mean it. That’s not a description I just throw around! Buffalo, ranch, and blue cheese flavors meld together in the warmest, most scrumptious way with the shredded chicken.

Since you’re making it at home, you can also decide if you want to go more or less spicy with the buffalo sauce. It’s your stromboli, you get to make all the rules!

How to Make Buffalo Chicken Stromboli

  1. Prepare. Preheat your oven to 425˚F. Lightly coat a baking sheet with cooking spray or sprinkle with cornmeal.
  2. Assemble the stromboli. Lightly dust a work surface with the flour and roll the dough out to a large rectangle approximately 13×9 inches. Add the buffalo sauce (We love this homemade sauce!) and the shredded chicken to a bowl. Toss to coat. Spread the chicken evenly over the dough leaving 1/2 inch around the edge. Drizzle the ranch dressing over the chicken evenly and sprinkle with the blue cheese to cover.
  3. Roll it and prepare it for baking. Roll the stromboli up jelly roll style tucking the ends inward. Continue rolling until the stromboli is sealed. Arrange the stromboli on the prepared baking sheet seam side down. Brush the top and sides with the egg.
  4. Make it flavorful. In a small bowl, mix together the ranch seasoning and cheese. Sprinkle the cheese mixture over the Stromboli to cover.
  5. Bake, then let it rest. Transfer to the oven and bake for 20-25 minutes until golden brown and crisp. Allow the Stromboli to rest for 5-10 minutes before slicing.
  6. Enjoy! Serve with the blue cheese dressing, crumbled blue cheese, ranch dressing, celery and extra buffalo sauce, if desired.

Tips for the Best Buffalo Chicken Stromboli

  • Use cornmeal for a crunch! If you want an extra little crunch on your stromboli, sprinkle cornmeal across your baking sheet prior to placing the pizza dough on it. This will also prevent it from sticking to the pan. You can spray it down with cooking spray if you’d prefer. Just make sure you do one or the other – spray or cornmeal – not both. We use this same method when baking up our Italian Stromboli and it never disappoints!
  • Use a rotisserie chicken. Need to save some time? You can always cook and shred your own chicken, but I like to cut a corner by shredding an already cooked rotisserie chicken from the grocery store.
  • Add a little heat. If you prefer a spicier buffalo sauce, add a few shakes of hot sauce to your stromboli filling! Just keep in mind that with most hot sauces, a little goes a long way, especially when paired with already bold buffalo sauce.

  • 1 1/2 pounds pizza dough, room temperature
  • 1 cup Buffalo Sauce
  • 1 pound cooked, shredded chicken breast
  • 3/4 cup ranch dressing
  • 1 cup crumbled blue cheese
  • 1 teaspoon ranch seasoning
  • 1 tablespoon grated parmesan cheese
  • 1 large egg, lightly beaten
  • 1 cup blue cheese dressing, for dipping

Instructions

Stromboli can be assembled up to 2 days in advance. Store in the refrigerator wrapped in plastic wrap until ready to bake.
