Super easy Blueberry Dump Cake is just like blueberry cobbler but even simpler to make with your favorite boxed cake mix. Fresh blueberries are topped with cake mix, pats of butter and baked into a bubbling, sweet dessert perfect all year long.

Blueberry Dump Cake

We love making easy desserts during the summer months. Our go-to is usually some kind of fruit pie but since they can be a little time consuming. 

So, I tend to lean toward more cobbler recipes because they’re a cinch to make just mixing the ingredients and baking them. Even easier than a cobbler, a Dump Cake recipe is so insanely easy it’s a little dangerous because you can make them in under an hour with a bubbling, fruity, cake-like dessert just begging for a scoop of vanilla ice cream.

This Blueberry Dump Cake recipe is our summer favorite but you can enjoy it all year long since blueberries seem to be available anytime of year. You can also make it using frozen blueberries if you don’t have fresh available.

The top of the dump cake bakes up into a crispy, crunchy topping with a soft cake-like interior while the berries become tender and juicy in the most cobbler like fashion.

Ingredients

  • Blueberries – You can use fresh or frozen blueberries. Just be sure, if frozen, they are thawed before assembling the cake.
  • Sugar – Granulated Sugar adds sweetness but if your berries are pretty sweet you can cut back on the sugar.
  • Cornstarch – This is a thickening agent so your blueberry thicken up instead of being watered down.
  • Cake Mix – We use yellow cake mix but you can experiment with other flavors.
  • Butter – Salted butter is called for but if using unsalted, add a pinch of salt to the cake mix before sprinkling over the berries.

What is Dump Cake

A dump cake is a baked fruit dessert with a cake topping that’s often confused with a fruit cobbler. Dump cakes are made with fresh fruit, fruit filling or frozen fruit that are sprinkled with cake mix and topped with butter before baking.

Cobblers, on the other hand are made with flour, baking powder and melted butter, primarily and fresh fruit.

You don’t need to stir your dump cake before baking which makes this even easier to make!

How To Make Blueberry Dump Cake

This is the simplest fruit dessert you can ever make. Most recipes call for using a canned fruit filling but we decided to use fresh blueberries and it was most definitely the right thing to do.

  1. Toss the blueberries with the cinnamon, cornstarch, lemon juice and salt.
  2. Pour the blueberries into a 13×9 inch baking dish.
  3. Sprinkle the cake mix on top of the blueberries.
  4. Arrange the butter on top of the cake mix.
  5. Bake the dump cake for 1 hour.
  6. Allow the cake to rest for 15 minutes before serving.

How To Make a Dump Cake With Pie Filling

If you don’t want to use fresh blueberries, you can make this dump cake with 2 cans of blueberry pie filling. Simply spread the filling on the bottom of a baking dish, then top with the cake mix and butter before baking.

I just love the flavor of fresh blueberries instead of the canned pie filling.

Variations on Dump Cake

You can really use any fruit filling or fresh fruit you want to make this dump cake recipe. Simply replace the blueberries with cherries, peaches, apples or cherries for your favorite Dump Cake recipe.

How To Store

You can serve your Blueberry Dump Cake hot out of the oven or at room temperature. 

Leftovers will keep for up to 5 days when wrapped tightly with plastic wrap and stored in the refrigerator. You can enjoy your dump cake chilled or heated in the microwave for a few seconds.

We like to serve our’s topped with ice cream or a big dollop of whipped cream.

This easy fruit dessert is simpler than ever. Blueberry Dump Cake is made with cake mix, fresh berries and butter with a few extra seasonings to boost the flavor to an epic level.

Ingredients

  • 6 c. blueberries
  • 3 tbsp. granulated sugar
  • 2 tbsp. cornstarch
  • 1 tsp. pure vanilla extract
  • one lemon, zested and juiced
  • 1/4 tsp. cinnamon
  • 1 box yellow cake mix
  • 1/2 c. 1 stick cold butter, cut into 1/4 inch slices

Equipment

  • baking dish

Instructions 

  • Preheat oven to 350°F.
  • In a medium bowl, combine blueberries, sugar, cornstarch, vanilla, lemon juice, zest and cinnamon.
  • Pour into a 9×13″ baking dish coated with cooking spray.
  • Sprinkle cake mix evenly on top.
  • Arrange the butter on top and bake for 1 hour or until the top is golden brown and bubbling.
  • Allow to cool for 10 minutes before serving.
