The BEST EVER way to cook Corn on the Cob! Easy Instant Pot Corn on the Cob is like magic in the pressure cooker. Sweet, tender, juicy corn on the cob is ready in a matter of minutes without having to wait forever for water to boil on the stove. My NEW FAVE way to cook sweet summer corn!

It’s officially summer corn season. Our local market sent out their annual social media notification that fresh summer SWEET CORN has arrived and if you’ve ready my other corn posts….you’ll know that I was a little skeptic.

Usually, corn on the cob in this area isn’t really ready until July. Ready being, sweet, juicy and tender and not at all resembling the corn we feed to livestock. But I went down to the farm anyway to grab a few ears and, boy, are they right. This year’s corn season has so much promise just based on my first few ears. 

So, if you’re lucky enough to have a farm within a few miles that already has fabulous corn….OR your local supermarket has ears of corn piled to the rafters, I have the fastest way to get it on the table with the tastiest results ever. This Instant Pot Corn on the Cob is the BEST way to cook corn on the cob….hands down. 

The Instant Pot is quickly becoming my new favorite tools for getting quick meals on the table and cooking fresh tender vegetables in seconds that normally take up to an hour.

I was an Instant Pot hater for a long, long time because everyone raved about all their stews and soups….all things that I love using my slow cooker for. This Instant Pot Corn on the Cob has clinched it for me….making my Instant Pot “instantly” valuable as a kitchen appliance I reach for over and over again.

How to Cook Corn on the Cob in the Instant Pot

Cooking your corn on the cob in the Instant Pot is easy because it allows you the ability to pressure steam your corn in minutes. No longer do you have to wait for a pot of water to boil before dropping your corn to cook it. 

Pressure cooking your corn on the cob still gives you that juicy, sweet, tender corn on the cob that you know and love. 

  1. Husk the corn and remove the corn silk. 
  2. Cut the corn cob in half. Because of the size and shape of the Instant Pot, the corn on the cob will fit better if you cut it in half.
  3. Place the trivet in the bottom of the pressure cooker and add one cup of water.
  4. Stand the corn cobs on their ends atop the trivet to ensure even cooking.
  5. Place the lid on the pressure cooker making sure the valve is sealed and set to 5 minutes of high pressure.
  6. When the corn is finished cooking, manually release the pressure.
  7. Transfer the corn to a platter and pour out the remaining water.
  8. Melt the butter in the pressure cooker and add the corn back to the pot.
  9. Toss to coat and serve immediately.

You can skip the step of melting the butter in the pot and just serve it at the table if you prefer since some people don’t eat their corn with butter. (BLASPHEMY!)

If you don’t want to husk your corn on the cob, that’s perfectly fine, too! You can cook your corn on the cob in the Instant Pot still in the husks (you still need to cut in half) but add 1 minutes to the cooking time.

  • Butter and salt….always a classic.
  • Mexican style with Cojita cheese, sour cream, lime juice.
  • Chile powder, butter and lime zest
  • Parmesan, basil and butter
  • Truffle butter…just do it.

Ingredients 

  • 6 ears of corn
  • 1 cup of water
  • 8 tablespoons salted butter
  • salt, to taste

Instructions 

  • Husk the corn and remove the corn silk.

Notes

You can freeze leftover corn on the cob if wrapped tightly in plastic and stored in the freezer for up to 2 months.
