I love meatloaf any way I can get it, whether itโ€™s CrockPot Meatloaf, Turkey Meatloaf, or The Best Meatloaf Recipe Ever. But one way I never thought to make it was in the air fryer. Well, I am now a convert! Air fryer meatloaf has an incredible flavor and texture thanks to the applianceโ€™s convection heating. The meatloaf remains juicy and tender on the inside, while developing a deliciously crisp and caramelized glaze on the outside. Itโ€™s everything you want it to be and more!

The combination of savory seasonings and the sweet tanginess of the glaze creates a perfect balance, and you also get all that down-home comfort food flavor you want in a meatloaf recipe. To be sure, this is a kid-friendly dinner your whole family will devour!

The air fryer heats up quickly and cooks the meatloaf faster, saving time in the kitchen without sacrificing flavor. This air fryer meatloaf recipe is perfect for busy weekdays, but it tastes like a Sunday night dinner!

Ingredients for Air Fryer Meatloaf

  • Lean Ground Beef and Ground Pork โ€“ I like to use a combination of both pork and beef for a richer flavor and moist texture. You can also make this recipe using ground turkey for a leaner option.
  • Diced Sweet Onion โ€“ Use a very small dice so you donโ€™t end up with big crispy chunks of onion in your meatloaf. Better yet, puree the onion in a food processor or grate the onion on the side of a box grater.
  • Minced Garlic โ€“ Enhances the overall flavor with a savory kick; garlic powder can be used in a pinch.
  • Egg โ€“ Acts as a binder to hold the mixture together.
  • Panko Bread Crumbs โ€“ Provides texture and helps the meat hold shape; regular breadcrumbs or crushed crackers are good substitutes but be sure to reduce the amount by half or your meatloaf will be dense.
  • Tomato Paste โ€“ Adds richness and a touch of acidity.
  • Italian Seasoning โ€“ I use my homemade Italian Seasoning. You can also use Meatloaf Seasoning in addition to the italian herbs.
  • Worcestershire Sauce โ€“ For a boost of umami flavor, Worcestershire sauce canโ€™t be beat. You can substitute with soy sauce or coconut aminos.
  • Kosher Salt and Ground Pepper โ€“ I like to use freshly ground black pepper, which is more fragrant and flavorful.

Meatloaf Sauce

  • Ketchup โ€“ A tangy, sweet base for the glaze; it contrasts perfectly with the deeply savory meatloaf.
  • Light Brown Sugar โ€“ Adding sugar helps get that nice caramelization on top of your meatloaf!
  • Balsamic Vinegar โ€“ For acidity and richness, you can substitute with apple cider vinegar, if you prefer.
  • Dijon Mustard โ€“ Adds a sharp, tangy kick to give the glaze some depth.

How to Make Air Fryer Meatloaf

  1. Prepare. Preheat your air fryer to 350ยฐF.
  2. Make the meatloaf mixture. Use your hands (or a utensil if youโ€™re squeamish) to combine the ground beef, pork, onion, garlic, egg, bread crumbs, tomato paste, Italian seasoning, Worcestershire sauce, salt, and pepper.
  3. Air fry. Divide the mixture into two portions and shape each into small loaves. Place in the air fryer basket and cook for 20 minutes.
  4. Make the glaze. Whisk the ketchup, brown sugar, vinegar, and mustard in a small bowl.
  5. Glaze and finish cooking. Spoon half the glaze over the meatloaves and cook for another 5-7 minutes, or until they reach 160ยฐF.
  6. Rest. Let the meatloaves rest for 10 minutes, then serve with the remaining glaze.

Tips for Cooking Meatloaf in the Air Fryer

Cooking meatloaf in an air fryer is quick and easy, but here are some additional pointers to make sure it turns out perfect!

  • Line the basket. You can use parchment paper or an air fryer liner to prevent sticking and make cleanup easier.
  • Donโ€™t overmix. Avoid overmixing the meat mixture, as this can result in a dense, tough texture. Similarly, donโ€™t compact the meat or squeeze it too much when youโ€™re shaping it into loaves.
  • Go by temperature, not time. Check the internal temperature with a meat thermometer to ensure that the meatloaf is safe to eat and cooked through (without drying out).

Meatloaf Variations

You can use this air fryer method to make your favorite meatloaf recipe or try some of these variations.

  • Cheese-stuffed meatloaf. Add a layer of shredded cheddar or mozzarella in the center of the meat mixture before shaping it into a loaf. The melted cheese is like a little surprise in every slice. (Cheese is the best kind of surprise!)
  • BBQ glazed meatloaf. Swap out the traditional ketchup glaze for your favorite barbecue sauce
  • Italian-style meatloaf. Incorporate grated Parmesan cheese into the loaf and top it with marinara sauce and a sprinkle of mozzarella.

How to Store and Reheat Leftovers

Wrap leftover air fryer meatloaf tightly in plastic wrap or aluminum foil, or store it in an airtight container in the refrigerator for 3-4 days. For longer storage, you can freeze the meatloaf by wrapping it and placing it in a freezer-safe container or bag. Frozen meatloaf can be stored for up to 3 months. 

You can reheat slices in the microwave for a quick option or warm the meatloaf in your air fryer, which will restore some of the crispiness on the sides and top. I love to use my leftover meatloaf to make a Grilled Meatloaf Sandwich!

Ingredients

  • 1 ยฝ lb lean ground beef
  • ยฝ lb ground pork
  • 1 cup diced sweet onion
  • 1 garlic clove minced
  • 1 egg
  • 1 cup panko bread crumbs
  • 2 tbsp tomato paste
  • 1 tbsp italian seasoning
  • 1 tbsp Worcestershire sauce
  • 1 tsp kosher salt
  • 1 tsp ground pepper

Meatloaf Sauce

  • 1 cup ketchup
  • 1 cup light brown sugar
  • ยผ cup balsamic vinegar
  • 1 tbsp dijon mustard

Equipment

Instructions 

  • Preheat air fryer to 350หšF.
  • In a medium bowl, combine the ground beef, sausage, onion, garlic, egg, bread crumbs, tomato paste, Italian seasoning, Worcestershire sauce, salt and pepper until well blended. DO NOT OVER MIX.
  • Divide the meatloaf mixture into 2 even pieces and shape into small loaves.
  • Place the meatloaves in the air fryer basket and cook for 20 minutes.
  • While the meatloaf is cooking make the glaze. In a small bowl, whisk together the ketchup, brown sugar, vinegar and mustard.
  • Spoon half the glaze over the meatloaf to coat. Continue cooking for an additional 5-7 minutes.
  • Check for doneness with an instant read thermometer. The meatloaf is done when it registers 160 degrees F.
  • Remove the meatloaf from the air fryer and allow to rest for 10 minutes.
  • Serve the meatloaf with the remaining glaze.

Notes

Air fryer meatloaf is best if served soon after cooking but leftovers are fantastic in a grilled meatloaf sandwich!
You can prep the meatloaf up to 2 days in advance. Cover tightly with plastic wrap and refrigerate until youโ€™re ready to cook.
