Kids and adults both go nuts for these, and it comes together faster than you can say “my marshmallow is on fire.”

- Heat a skillet over medium heat and add a light brush of butter or oil.
- Place one tortilla in the pan, sprinkle half of it with chocolate (squares or chips), add a layer of marshmallows and graham cracker pieces.
- Fold the tortilla over the filling and cook until golden brown and melty, about 1-2 minutes per side. Use a spatula to press gently to seal.
- If you want extra toasty marshmallow, pop it under the broiler for just a few seconds, just watch it carefully so they don’t burn!
- Slice into wedges and serve warm.

If you somehow have leftovers, though let’s be real, they can be kept in an airtight container at room temp for a few hours or in the fridge for up to a day. Reheat in a skillet over low‑medium heat so they crisp back up, microwaving can make them soggy and melty in all the wrong ways.

S’mores Quesadilla Recipe

Equipment
- skillet or grill
- spatula
Ingredients
- 8 corn tortillas
- 8 ounces semi-sweet chocolate chips
- 2 cups mini marshmallows
- 8 tablespoons graham cracker crumbs
Instructions
- Lay the tortillas on a large skillet coated with cooking spray or grill grate over a medium flame.
- Immediately top four of the tortillas with the chocolate chips, marshmallows and graham cracker crumbs. Allow the marshmallows to begin to puff up and then top with the remaining tortillas. Press gently with a spatula to seal.
- Flip the quesadillas carefully. Allow to cook for an additional minute and then transfer to a plate or serving platter.
- Let the quesadillas rest for 1-2 minutes and then cut with a pizza cutter into four triangles.
- Serve immediately.
Notes
- For crispier edges, use a little more butter or oil on the outside of the tortilla.
- To make ahead, assemble without cooking and wrap tightly; cook just before serving for best texture.
- Mix and match chocolate: milk chocolate, dark chocolate, peanut butter, or fruity flavors (Like lemon curd) all play well here.
- To avoid sticking, use a non-stick skillet or make sure your pan is well seasoned before starting.
