I’m finally….REALLY….back from vacation. Last week I had a hard time getting back into the swing of things after my Caribbean vacation, then the July 4th holiday snuck up on me and THEN….I decided to spend a few relaxing days at the beach. So, I really had my first two week vacation ever in my whole life. Other than maternity leave, which….even though a lot of people will argue this point….is not a vacation. Seriously, sleep deprivation with slight starvation and a baby attached to you almost 24/7 is not my idea of a vacation. Not by a long shot. But my last two weeks…now THAT was a vacation. And even the days when I did manage to drag myself into the kitchen to make dinner, I made sure I kept things simple….and clean up was a breeze. Because who wants to be standing over a sink full of dishes on their vacation….right? Not me.
Enter my favorite grilling recipe of all time….Easy Grilled Garlic Potatoes in Foil. I almost feel like this one is a little to easy to share as a recipe but every time I make it for guests they rave about it. And there are never any leftovers….which is a sure sign that a recipe is one that should be shared. Over and over again. It really couldn’t be simpler to make. I start with a foil “bowl” and fill it with baby Yukon golds. If you can’t find them, then just cut up some potatoes into bite sized pieces…there are really no rules here.
Toss in a handful of fresh garlic cloves, I like to smash them with a knife to release all that goodness locked inside. It seeps out into the olive oil that’s drizzled over top making everything all garlic-y and fabulous. I rough cut some sweet onions and throw them in there too.
Then I toss in a few fresh herbs, salt and pepper….seal it all up and throw it on the grill. It’s a great summer side dish because you can get your Easy Grilled Garlic Potatoes in Foil going before starting your barbecue chicken or grilled steak.
I have, literally, been making these Easy Grilled Garlic Potatoes in Foil for well over 20 years and haven’t changed them up much at all. They’re one of the most requested recipes I make….aside from these mashed potatoes. And they were definitely the inspiration for these Skillet Smashed Potatoes I made a few years back. The only thing I can say now is…..I’m sorry I waited so long to share them with all of you!
Easy Grilled Garlic Potatoes in Foil
- 3 pounds baby Yukon Gold Potatoes
- 5-6 peeled whole garlic cloves
- 1 large sweet onion, cut into chunks
- 1/4 cup olive oil
- 4 sprigs fresh thyme
- kosher salt and fresh ground pepper
- Preheat grill.
- Lay two sheets of heavy duty foil, approximately 24 inches long, on top of each other and form a bowl.
- Arrange the potatoes in the center of the bowl. Top the potatoes with the garlic and onion.
- Drizzle the potatoes with olive oil.
- Place the thyme on top of the potatoes. Season with salt and pepper, then toss to coat.
- Seal the foil pouch on the top and sides. Grill for 25-30 minutes over high heat or until the potatoes are fork tender.
- Carefully open the foil packet and serve immediately.
Foil packet can be assembled up to 8 hours in advance and kept at room temperature until ready to grill.
