The Turkey Gobbler is a beloved menu item from Wawa, a popular convenience store chain on the East Coast. It’s basically your quintessential Thanksgiving leftover sandwich, but… better

What makes it better? Maybe it’s the aioli, which isn’t something I usually add to Thanksgiving leftover sandwiches, or maybe it’s because the fine folks at Wawa have the boldness to add stuffing to a sandwich for double the bread goodness. 

I knew that I could replicate the Wawa Turkey Gobbler experience at home so I set out to do it and dare I say, it’s even more delicious than the original? Using homemade Thanksgiving leftovers really takes the sandwich to another level! You’ll never settle for plain turkey and cranberry sauce on a stale roll again.

How to Make a Turkey Gobbler Sandwich

  1. Warm your leftovers. Reheat the turkey and stuffing in the microwave or a skillet, and warm up the gravy in a bowl in the microwave or in a small pan on the stovetop. 
  2. Slather on the aioli. Spread the aioli on the cut sides of the rolls—top and bottom halves.
  3. Assemble. Add two slices of cheese to each roll, followed by the turkey, stuffing, and cranberry sauce. 
  4. Finish. Drizzle with gravy and serve.

Tips for Making a Turkey Gobbler Sandwich

With a sandwich, there really aren’t all that many tips to share—there’s not much to it! But here are a few pointers.

  • Eat it right away. This sandwich is best enjoyed immediately after you make it. Don’t try to wrap it up and bring it to work! With the gravy and cranberry sauce, it definitely gets soggy over time.
  • Don’t overfill it. I know it’s tempting, especially if your entire fridge is stacked with airtight container after airtight container of leftovers, but if you use too much stuffing and cranberry sauce, it will end up falling out with every bite.
  • You really need a long roll. Slices of sandwich bread just won’t stand up to all the fillings in this sandwich.

Variations and Substitutions

The options are endless when it comes to a sandwich. Don’t be afraid to make it your own!

  • Make Turkey Gobbler sliders. If you have leftover dinner rolls, you can make mini versions of this sandwich with smaller portions of the ingredients.
  • Get creative with leftovers. Run out of leftover turkey? Use sliced deli turkey instead. Have roasted delicata squash in the fridge? Layer that on! Green bean casserole? It might be weird, but you do you.
  • Play around with condiments. While this recipe calls for garlic aioli, you can swap in other aioli varieties or a good, grainy mustard.

Ingredients

  • 1 pound roasted turkey breast, sliced
  • 1 cup leftover stuffing
  • 8 slices Swiss cheese
  • ½ cup cranberry sauce
  • ¼ cup garlic aioli
  • ¼ cup turkey gravy
  • 4 long hoagie or sub rolls

Instructions 

  • Reheat the turkey breast and stuffing until warm in the microwave or in a skillet.
  • Heat the gravy in a separate bowl until hot.
  • Arrange the rolls on a flat surface and spread the aioli on the inside of the rolls.
  • Layer two slices of cheese on each roll and then top with the turkey, stuffing and cranberry sauce.
  • Drizzle the gravy over the sandwich ingredients and serve immediately.
