Why I Love This Recipe

You guys, this easy S’mores Quesadilla might just be my new favorite summer dessert or snack. It’s gooey, chocolaty, crispy and all the campfire vibes with zero fuss. Make it inside on the stove, outside on the grill, or, if you’re feeling extra, under the broiler for a few seconds to toast the marshmallow. Kids and adults both go nuts for these, and it comes together faster than you can say “my marshmallow is on fire.”

Ingredients For My S’mores quesadilla

Here’s what you’ll need and a few fun ways to switch things up.

  • Tortillas – I usually use flour tortillas, but corn tortillas work too if you want a slightly crispier shell or a gluten‑free option.
  • Chocolate – I do semi‑sweet chocolate squares or chocolate chips, but dark chocolate chips or even peanut butter cups (for a salty‑sweet twist) are awesome substitutions.
  • Marshmallows – I like mini marshmallows, but you can also use big ones cut in half or marshmallow fluff spread on one side of the tortilla.
  • Graham crackers – Crushed graham crackers or break them up into small pieces. If you’re out of graham crackers, try honey‑graham, chocolate graham, or even Golden Grahams cereal for texture.
  • Butter or oil – For cooking the quesadilla, use a little butter or coconut oil for extra flavor, or swap in non‑stick spray or avocado oil, if you prefer.

How to Make a S’mores Quesadilla

  1. Heat a skillet over medium heat and add a light brush of butter or oil.
  2. Place one tortilla in the pan, sprinkle half of it with chocolate (squares or chips), add a layer of marshmallows and graham cracker pieces.
  3. Fold the tortilla over the filling and cook until golden brown and melty, about 1-2 minutes per side. Use a spatula to press gently to seal.
  4. If you want extra toasty marshmallow, pop it under the broiler for just a few seconds, just watch it carefully so they don’t burn!
  5. Slice into wedges and serve warm.

How to Store Leftovers

If you somehow have leftovers, though let’s be real, they can be kept in an airtight container at room temp for a few hours or in the fridge for up to a day. Reheat in a skillet over low‑medium heat so they crisp back up, microwaving can make them soggy and melty in all the wrong ways.

  • Don’t overfill—a little chocolate and marshmallow go a long way. Too much and it can be messy to flip.
  • Even heat—cook over medium-low so the tortilla gets golden and the insides melt without burning the outside.
  • Crispy edges—butter or oil helps give that irresistible golden crunch.
  • Macgyver marshmallow toast—tiny slices of big marshmallows make quick contact and toast faster; fluff spreads gives a smoother layer.
  • Custom toppings—try sprinkling sea salt, mini chocolate chips, or crushed cookies on the melted chocolate layer before folding.

An insanely easy campfire style dessert or snack made with tortillas, melted chocolate, marshmallows and graham crackers. These S'mores quesadilla are the ultimate sweet-tooth satisfier.

Equipment

  • skillet or grill
  • spatula

Ingredients 

  • 8 corn tortillas
  • 8 ounces semi-sweet chocolate chips
  • 2 cups mini marshmallows
  • 8 tablespoons graham cracker crumbs

Instructions 

  • Lay the tortillas on a large skillet coated with cooking spray or grill grate over a medium flame.
  • Immediately top four of the tortillas with the chocolate chips, marshmallows and graham cracker crumbs. Allow the marshmallows to begin to puff up and then top with the remaining tortillas. Press gently with a spatula to seal.
  • Flip the quesadillas carefully. Allow to cook for an additional minute and then transfer to a plate or serving platter.
  • Let the quesadillas rest for 1-2 minutes and then cut with a pizza cutter into four triangles.
  • Serve immediately.

Notes

  • For crispier edges, use a little more butter or oil on the outside of the tortilla.
  • To make ahead, assemble without cooking and wrap tightly; cook just before serving for best texture.
  • Mix and match chocolate: milk chocolate, dark chocolate, peanut butter, or fruity flavors (Like lemon curd) all play well here.
  • To avoid sticking, use a non-stick skillet or make sure your pan is well seasoned before starting.
