Cottage Cheese Toast

Good morning! If you’re a toast fan, you’ll also love my easy recipes for avocado toast and ricotta toast. While I’ve got quite the long list of toast recipes I can’t get enough of, lately, this easy cottage cheese toast has been my morning go-to. It’s a craving that I just can’t seem to grow tired of. I think it’s mostly because there are SO many different ways to dress it up so it never grows old!

The cottage cheese itself is also pretty delicious… and nutritious. It’s loaded with protein so it keeps you fuller for longer and there’s also a good amount of calcium in there. I also like to mix it with some honey and olive oil for both flavor and consistency purposes. The honey gives it a nice subtle sweetness while the olive oil helps make it nice and smooth.

As for the toppings, there’s so much room for creativity! I’m including a list of my tried and true favorites – just scroll down to check those out. However, I’d love to hear from you! If you try something not mentioned, be sure to comment below so I can try it too. So far, my favorites (that I eat on a weekly basis) include caprese and blackberries with honey. So good.

I love cottage cheese and have been making deliciousness with it on the regular like this Whipped Cottage Cheese Dip.

Toppings to Try

Here are just a few of the best toppings for cottage cheese toast! Remember that there’s a lot of room here for creativity. Be sure to comment and let me know what worked best for you!

  • Caprese – Cherry tomatoes, fresh basil and balsamic reduction create a wonderful caprese flavor.
  • Fruits and Berries – Strawberries, blackberries, raspberries, blueberries, bananas, pineapples, etc. The list goes on and on! If you do decide to use fruits and/or berries, consider topping them with an extra drizzle of honey. It’s the best!
  • Herbs – Basil, mint and cilantro are just a few of my favorites.
  • Eggs – A fried or poached egg goes so well with the cottage cheese! It also adds even more protein to keep you full after breakfast.
  • Spicy – Add some heat with Sriracha, crushed red pepper flakes, hot honey or chili crunch.
  • Veggies – Freshly sliced avocados are always a hit! Sautéed mushrooms are another favorite of mine.
  • Chocolate – A sprinkle of chocolate chips or a drizzle of chocolate sauce adds a nice touch of sweetness.

Can I make it ahead of time?

Once the cottage cheese has been spread on the toast, it’s best enjoyed fresh! The longer it sits, it will add moisture to the bread and cause it to get a little soggy. Since this recipe really only takes about 5 minutes to toss together I recommend making and serving it right away.
