From sushi to burgers, everything’s better with a dollop of Spicy Mayo! You only need a few ingredients to whip it up and it comes together in minutes.

Spicy mayo is the condiment you didn’t know was missing from your life. I fell in love with it immediately after my first bite of a shrimp tempura roll. It’s creamy and rich, but the spicy flavor gives it an edge, while a squeeze of fresh lime makes it zippy and tangy. And all you need are a few everyday staples to make it. Give it a quick stir, and voilà! It’s ready to add to ALL the things.

Drizzle it over sushi rolls, slather it onto sandwiches and wraps. (It would be amazing in these Chicken Lettuce Wraps!) Dip your fries, dunk your chicken nuggets, or dress up your roasted veggies. Is there anything this spicy mayo CAN’T do?

What Is Japanese Mayo?

Japanese mayo—most famously sold as Kewpie mayo—is a rich, velvety mayonnaise that has become a staple in Japanese cuisine. And now it’s popular here in the US too! Unlike regular mayonnaise, Japanese mayo is made with egg yolks only, along with rice vinegar, and a hint of MSG, which gives it its signature umami flavor. While you can use regular mayo for this recipe, I really recommend using Japanese mayo for the best flavor!

  1. Combine. Add the mayonnaise, hot sauce, lime juice and sesame oil, if using, to a small bowl.
  2. Mix and adjust. Whisk to combine. Adjust to taste by adding more sriracha if desired.

Variations and Substitutions

Here are some helpful tips and variations to customize your spicy mayo to your liking!

  • Adjust the sriracha to your liking. You can add more or less sriracha depending on how spicy you want your mayo to be. 
  • Make it vegan. Use a plant-based mayonnaise instead of traditional mayonnaise to make a vegan spicy mayo.
  • Use fresh lime juice. It has a much more vibrant flavor than bottled juice.

How to Store Spicy Mayo

Transfer the spicy mayo to an airtight container and refrigerate it immediately. It can typically last up to a month. Do not freeze this recipe, as mayo separates when frozen and thawed.

Ingredients 

  • ¾ cups mayonnaise, for best flavor use Japanese Mayonnaise
  • 3 tablespoons Sriracha Hot sauce
  • 1 tablespoons lime juice
  • ¼ teaspoon sesame oil, optional

Instructions 

  • Add the mayonnaise, hot sauce, lime juice and sesame oil, if using, to a small bowl.
  • Whisk to combine.
  • Adjust to taste by adding more sriracha for more spice.
  • Transfer to an airtight consenter and store in the refrigerator for up to 30 days.

Notes

Store leftover Spicy Mayo in an airtight container, refrigerated, for up to 5 days.
