There’s not a whole lot that I’ll jump out of bed for in the morning… but this peach cobbler french toast bake is worth waking up early for! It’s got the perfect amount of juicy, sweet peaches, soft brioche bread and crunchy cinnamon streusel. It’s perfect for when you have guests over!
Basically, this is a peachy twist on a classic french toast bake. Brioche bread and peaches are tossed with a sweet and spiced egg mixture, then baked to perfection beneath a generous layer of cinnamon streusel. Now that peaches are in season, this is my go-to breakfast treat.
I know what you might be thinking. Who wants to wake up early and make a whole french toast bake?! However, this recipe is SO EASY. You can toss it all together in a baking dish and let the oven do the rest of the work for you in no time. Plus, it’ll make your whole kitchen smell like absolute heaven.
Ingredient Notes
Here’s a quick look at what you’ll need to make the best french toast/peach cobbler hybrid!
- Brioche Loaf – This is my favorite bread to make french toast with. It’s soft, but still sturdy enough to hold its shape when tossed in the egg mixture.
- Half and Half – You’ll need this to make everything nice and creamy.
- Eggs – Eggs are what binds a french toast bake together.
- Vanilla Extract – If possible, try to use pure vanilla extract and not imitation.
- Spices – Cinnamon and nutmeg create the best warm flavor to balance the sweet peaches.
- Sliced Peaches – Try to only use fresh peaches if possible, not frozen or canned.
- All Purpose Flour – When measuring flour, it’s best to spoon it into the measuring cup. If you dunk it into the bag, you end up packing it.
- Brown Sugar – In a pinch, you can always make your own by combining 1 cup of white granulated sugar with 1 tbsp molasses.
- Butter – I prefer using unsalted butter.
How to Make Peach Cobbler French Toast Bake

- Prepare the bread. Cute the brioche loaf into 1 inch cubes. Place them in a big mixing bowl.
- Make the egg mixture. Whisk together the half and half, eggs, vanilla and spices until combined.
- Make the french toast layer. Add the peaches to the bowl with the bread and give it a toss. Then, pour the egg mixture all over the bread cubes and toss it to combine. Be gentle! You don’t want to break up the bread. Spread this into a baking dish.
- Add streusel. Mix together the flour, brown sugar, butter, and cinnamon with your fingers. When a crumbly paste forms, sprinkle it all over the french toast.
- Bake. Bake the french toast casserole at 350°F for 45-60 minutes. You’ll know it’s done baking once it’s puffed up and golden brown.
PRO TIP: Give this peach french toast bake a little something special by dusting it with powdered sugar right before serving!
Storing and Reheating
Wait until your leftovers fully cool to room temperature prior to storing in an airtight container in the refrigerator. Properly stored, it should stay fresh for about 3-4 days. Reheat individual portions in the microwave for 30 seconds at a time. Or, pop the entire casserole in the oven and reheat just until warmed back up.

Ingredients
- 1 lb Brioche loaf
- 2 cups Half and Half
- 5 Large Eggs
- 1 teaspoon Pure Vanilla Extract
- 1 teaspoon Ground Cinnamon
- 1/2 teaspoon Ground Nutmeg
- 2 cups sliced peaches
- 1/4 cup all-purpose flour
- 1/4 cup brown sugar
- 2 tsp light butter
- 1/2 tsp ground cinnamon
- Confectioners’ Sugar, for dusting
Equipment
- 1 9×12 Baking Dish
Instructions
- Preheat oven to 350 degrees.
- Cut the brioche into 1 inch cubes and place in a large bowl.
- In a medium bowl, whisk together the half and half, eggs, vanilla, cinnamon, and nutmeg.
- Pour the peaches in the bowl with the brioche. Toss to combine.
- Pour the egg mixture over the bread cubes and carefully toss the mixture to coat being careful not to break up the bread.
- Transfer the mixture to a 13×9 inch baking dish coated with cooking spray.
- In a small bowl, mix together flour, brown sugar, butter, and cinnamon with your fingers until a crumbly paste forms. Sprinkle the streusel evenly over the peaches.
- Bake the casserole for 45-60 minutes or until puffed up and golden brown.
- Serve the casserole dusted with powdered sugar, if desired.
