I have a little secret…I talked about it before but I don’t think you can really understand how bad the problem is unless you see it for yourself. I’m a bit of a packrat….a hoarder, if you will. It’s not so bad that you can’t walk through my house without having to step over piles of newspaper from 1973….but you should probably wear a hardhat if you open one of my closets. The rest of my house is clean and tidy….but the closets, that’s where my deep, dark secret is hidden away. I like to hold onto things…just in case. You know, just in case someone in the house needs a chocolate balsamic syrup from 1984. Or just in case those acid washed jeans come back in style…even though I could never squeeze my buns into a size 00 again. I like to hold onto things because you may just need it or want it or regret throwing it away because that Bruce Springsteen cassette tape set just may be worth something someday.
But I DO get to my breaking point and need to call in help when things get out of control….and thanks to OXO, I tackled my overly stuffed pantry closet, which is tiny to begin with, and gained some control over my hoarding issue so I can get some work done efficiently. (Holy, run-on sentence!) My pantry is the size of a small shoebox, basically. So, disorganization is not an option in there and it was highly out of control….as you can see.
I’ve been wanting to store some homemade pantry staples in there like fajita seasoning and Instant Pancake Mix but there just wasn’t any room left to spare. Like none…at all. And no matter what I did to try to organize it things just still seemed crammed in there…then the family would rummage through the closet and, well, you probably know how that goes if you’ve ever lived with someone…other than yourself and your dog. Right? Nothing was labeled, bags of opened flour and rice were spilled all over the floor, cracker boxes that were practically empty were stuffed into the corners. Homemade taco seasoning was stuck to the bottom shelf. Despicable.

A few quick tips for proper panty reorganization:
- Whether you want to or not….completely remove everything from the shelves and check the dates. I threw out about 3/4 of the contents of my pantry because of stale or expired food. That’s just junk taking up space.
- Categorize the items that will be returning to the pantry in a way that makes sense for you….I have a shelf for baking, one for sauces, condiments and oils/vinegars, one for snacks and one for everyday items like cereal/pasta/rice. It may seem weird but do what will work for you.
- Make sure the items you use most often are at the front of the shelf…this way, your family will have a better chance of putting them back where they found them.
- Label your items…you’re never going to remember which is the bread flour and which is all purpose once they’re in the container so be sure to label them!
- Clean the shelves before returning the items to the pantry because the last time you cleaned them was probably when you moved into your house.

Instant Pancake Mix (and How to Organize Your Pantry)
- 6 cups all purpose flour
- 3 tablespoons baking powder
- 1 1/2 teaspoons baking soda
- 1 tablespoon kosher salt
- 2 tablespoons brown sugar
- 1 large egg
- 1 cup milk
- 2 tablespoons butter
- Whisk together all ingredients in a large bowl and store in an airtight container until ready to use. (If there are clumps of brown sugar you can break them apart with your fingers.)
- To make the pancakes:
- In a large bowl, whisk together 1 egg, 1 cup of milk and 2 tablespoons melted butter until blended. Stir in 1 cup pancake mix until blended but still has some lumps.
- Heat 1 tablespoon butter in a large griddle over medium heat.
- Gently ladle pancake batter onto griddle. Cook the pancakes until bubbles begin to form and the edges look dry.
- Flip the pancakes over and cook for an additional 2-3 minutes.
- Serve immediately or transfer to a platter covered with foil to keep warm.
